The results confirmed the successful encapsulation of CEO, preserving its volatile components and demonstrating excellent thermal stability. Notably, CEO-Ms effectively prolong the shelf life of bread without direct contact, while also inhibiting dominant genera and enhancing community diversity. 摘要
