本研究调查了国内常用香料(n = 156)4种食用部位中22种多环芳烃(PAHs)的浓度、来源及风险评价。∑22 PAHs、∑PAH4和∑16 PAHs的总浓度分别为79.95 ~ 920.17 μg/kg、ND-252.97 μg/kg和79.95 ~ 813.81 μg/kg。各环多环芳烃的污染分布以2-4环为主,但5环的致癌贡献率(78.41 %)和致突变性贡献率(83.13 %)最大。污染源溯源分析证实,香料中的多环芳烃主要来自燃料油、草料、生物质和煤炭燃烧源。苯并(a)芘一直在样品致癌性和诱变性贡献的分布中占有重要地位,水果和种子的等效致癌性和诱变性浓度最高,需要长期关注。多环芳烃的终生致癌风险随着年龄的增长而增加,城市地区的风险高于农村地区。

期刊介绍: The Journal of Food Composition and Analysis publishes manuscripts on scientific aspects of data on the chemical composition of human foods, with particular emphasis on actual data on composition of foods; analytical methods; studies on the manipulation, storage, distribution and use of food composition data; and studies on the statistics, use and distribution of such data and data systems. The Journal''s basis is nutrient composition, with increasing emphasis on bioactive non-nutrient and anti-nutrient components. Papers must provide sufficient description of the food samples, analytical methods, quality control procedures and statistical treatments of the data to permit the end users of the food composition data to evaluate the appropriateness of such data in their projects. The Journal does not publish papers on: microbiological compounds; sensory quality; aromatics/volatiles in food and wine; essential oils; organoleptic characteristics of food; physical properties; or clinical papers and pharmacology-related papers.
