摘要

研究了在pH值为5.5 ~ 8.2的条件下,用有机盐法测定壳聚糖抗菌活性的方法。采用双稀释法对不同分子量、不同溶解度的壳聚糖样品进行抑菌活性测定。发现不同分子量和溶解度的壳聚糖样品的抑菌活性不同。结果表明,低pH条件下,壳聚糖的抑菌活性随分子量的增加而增强,而分子量为5-6 kDa的壳聚糖在中性和微碱性条件下的抑菌活性更高。通过对不同pH值下壳聚糖样品的抑菌活性测定,可以更可靠地评价壳聚糖的潜在生物活性。
