Sedimentation values significantly decreased after extrusion, and falling number depended largely on extrusion conditions. 摘要

本研究的目的是评价挤出机模具温度(90、100、110℃)和面粉水分(25、30、35%)对小麦(Kraljica、Olimpija)和无壳大麦(GZ-10、GZ-11)挤出改性面粉性能的影响。采用实验室单螺杆挤出机对面粉进行挤出,并对其微观粘淀粉学、粉粒学性能、沉降和沉降次数进行了测定。结果表明,无论是在高温剪切过程中,还是在退化过程中,挤压后的面粉粘度值都有所降低,稳定性有所提高。压榨前大麦面粉的质量等级为B2和C1级,压榨后大麦面粉的质量等级均为A1或A2级。挤压后沉降值显著下降,下降数量主要取决于挤压条件。通过仔细选择品种、面粉水分和挤压条件,可以生产出具有所需性能的面粉。
