In Colombia and especially in the coffee zone, policies have been implemented that allow acquiring fundamental levels in the food security of communities potentially affected by the difficulty in availability, access, quantity, quality and food safety, within this perspective, the objective of the study focuses on the development of a product that may have a high nutritional value, which is accepted organoleptically by the children and adolescents of the ECAS, but that in turn allows to revalue or repower indigenous agro-food goods of the study area, in the framework of the agricultural products recognized by the farmers, 3 stood out after the bromatological and microbiological analyzes: corn, yucca and bean petaco; these presented a significant nutritional value; with them a gastronomic alternative type sweet Snacks (cookies) was developed, using mixtures of 2 of the 3 assets chosen in proportions 25% 75%, 50% -50% y 75%25% (beans-corn and beans-yucca) in each of the tests carried out. The project is based on an applied research implemented an exploratory and descriptive methodology which consists of a mixed approach (qualitative-quantitative).
