摘要

本研究旨在测定山竹皮提取物中单宁的含量及山竹皮提取液保护豆腐饼蛋白的最佳剂量。使用水以1∶5、1∶15、1∶30、1∶45的比例提取芒果皮面粉。然后与豆腐饼混合并干燥。此外,体外试验采用完全随机设计,然后进行邓肯试验。本研究采用了5种处理方法,分别添加豆腐浆作为对照,每次重复4次。结果表明,山竹皮提取物在1:45的比例下产生的总单宁最高,为26.55g,N-NH3浓度最低(P<0.05),为4.01mM。除此之外,其干物质消化率和有机物消化率也最低(P<0.01),平均分别为61.46%和32%。结论是,山竹皮粉和水的比例为1:45时,可产生最高量的溶解单宁,并产生最低的N-NH3值,可作为蛋白质保护剂(旁路蛋白质)。
