Interview’s transcripts were submitted to thematic analysis and the foods identified in the inventory were classified according to the degree of processing and analyzed for their availability and access in the home food environment. Results Results revealed the high availability of ultra-processed foods; that the supermarket was the main source of food acquisition; and that purchasing food is part of an organized routine where time and control of expenses are the most valued aspects. 摘要

【摘要】目的本研究描述了有儿童和/或青少年且通常在家做饭的家庭的食品加工程度和购买食品的例行程序。方法采用访谈法、问卷调查法和食品清查法。访谈记录提交给专题分析,并根据加工程度对清单中确定的食品进行分类,并分析其在家庭食品环境中的可用性和可及性。结果超加工食品的可得性较高;超市是食品获取的主要来源;购买食物是有组织的日常生活的一部分,时间和费用控制是最重要的方面。结论:需要采取行动,重点规划和执行未加工和最低限度加工食品的采购,以促进这类食品的更大可得性和摄入量的增加,从而使自制饭菜的成分可能符合国家膳食指南的建议。
