摘要

本研究旨在确定在邦卡尔比南市Kaget市场、Pagi市场和Pembangunan市场销售的鸡肉中存在大肠杆菌O157:H7,并分析大肠杆菌发生频率与相关因素的关系。采用简单随机抽样的方法,按比例抽取30份鸡肉样品。本研究采用横断面法。大肠杆菌检测依据SNI 2897:2008《肉、蛋、奶及其加工产品微生物污染检测方法》进行。用O157胶乳凝集试验和H7抗血清试验证实O157大肠杆菌感染。数据分析采用描述性检验,危险因素分析采用卡方和优势比。结果显示,从Kaget市场分离的3份样品中有2份检出O157:H7大肠杆菌(66.7%)。大肠杆菌存在的显著危险因素为年龄大于45岁的商贩、亭距高速公路小于5米、用不洁净水洗手。大肠杆菌O157:H7的存在将对消费者健康构成威胁。
