The proposal made it possible, with its partial implementation, to provide for the durability of fish products as a function of time and temperature of storage in the logistical supply system. In the course of the research and in designing the procedure, different methods and techniques were used: activity flow diagram, cause-effect diagram, Pareto chart, brainstorming, Delphi method, experiment design, quality index method, surveys, document consultation, among others.
