This study aims to determine the antioxidant activity of edamame extracts. This study is an experimental study. Edamame beans extract obtained by remaceration during 24 hours using 96% ethanol. The concentration of edamame beans extract were make different concentration from 90 ppm, 121,3 ppm, 143 ppm, 173,1 ppm. The extract then added with 0,02 g of DPPH free radicals that have been disolved in 100 mL of 96% ethanol. Those solutions were measured at wavelength 516,5 nm by an UV-Vis spectrophotometer. Vitamin C used as positive control. 摘要

抗氧化剂是一种能抑制自由基氧化反应的化合物,具有高活性。根据以往的研究,毛豆(Glycin max (L)Merril)植物是一种含有异黄酮化合物的植物,具有抗氧化剂的作用。本研究旨在测定毛豆提取物的抗氧化活性。这项研究是一项实验性研究。用96%的乙醇再发酵24小时得到的毛豆提取物。毛豆提取物的浓度分别为90 ppm、121 ppm、3 ppm、143 ppm、173 ppm、1 ppm。然后在提取液中加入0.02 g溶解于100 mL 96%乙醇中的DPPH自由基。用紫外-可见分光光度计在波长516,5 nm处测量这些溶液。维生素C作为阳性对照。毛豆提取物的抗氧化活性ic50值为177.2 ppm,维生素C作为对照的ic50值为0.18 ppm。也就是说,毛豆提取物中的177.02 ppm属于低抗氧化剂。关键词:毛豆;抗氧化活性;DPPH法
