Monomers of collagen are constantly being synthesized and degraded throughout the development of a healthy individual to adulthood. The collagenase subfamily found in human matrix (metalloproteinases), are capable of hydrolyzing native collagen under physiological conditions. Collagenases are produced by specific cells involved in repairs and remodelling processes and plays important role in connective tissue metabolism. Present article focus on the major sources, properties and therapeutic aspects of microbial collagenases in their relation with various diseases and its applications in medical and food industry. Collagenolytic enzymes are highly specific for collagen and have been the focus of much practical interest with respect to cosmetic, medical and food based applications. 胶原蛋白是人体中分布最广泛的一类蛋白质。从健康个体发育到成年,胶原蛋白单体不断被合成和降解。胶原酶亚家族存在于人基质(金属蛋白酶)中,能够在生理条件下水解天然胶原蛋白。胶原酶是由参与修复和重塑过程的特定细胞产生的,在结缔组织代谢中起重要作用。本文就微生物胶原酶的主要来源、性质、治疗方面及其与各种疾病的关系及其在医疗和食品工业中的应用作一综述。胶原溶解酶对胶原蛋白具有高度特异性,在化妆品、医疗和食品应用方面一直是人们关注的焦点。这些酶最常见的用途似乎是在医学上,因为它们已被用于治疗烧伤和溃疡,消除疤痕组织,并在成功移植特定器官中发挥重要作用。
