Compared to control group, BHT and different rates of shell extract were determined to have significant effects on prevention of oxidation. Comparison of total volatile basic nitrogen (TVB-N), thiobarbituric acid (TBA), peroxide, free fatty acids and pH values indicated that the most positive result was found in the BHT added group, which was followed by the groups containing 0.5% and 0.1% of shell extracts, and control group. 摘要

本研究旨在研究红虾壳提取物对凤尾鱼(Engraulis encrasicolus)在冷藏18 d期间化学参数变化的影响。采用丁基羟基甲苯(BHT)进行抗氧化效果比较。鱼类在冷藏期间的变化调查表明,脂质氧化显著增加(P<0.05)。与对照组相比,确定BHT和不同比例的壳提取物对氧化的预防效果显著。比较总挥发性碱性氮(TVB-N)、硫代巴比妥酸(TBA)、过氧化物、游离脂肪酸和pH值,结果显示BHT添加组最阳性,其次为0.5%和0.1%壳提取物组和对照组。本研究认为,在鱼的贮藏过程中,除使用合成抗氧化剂外,还应使用天然鱼壳提取物。
