Abstract

The aim of this study is to optimize the conventional solid-liquid extraction of total phenolic compounds and anthocyanins from purple corn cobs using response surface methodology (RSM). The effects of time, temperature and ß-cyclodextrin concentration on polyphenol recovery were studied.
