The present article deals with the implications originated by climatic elements in the physiology of vegetables in the field, which if added to the damage in the post-harvest stages, can generate quantitative and qualitative losses for producers and consumers. Abstract
Fruit and vegetables compose a variety of vegetable species found in human food. In order that the consumer can safely enjoy this food category, it is essential to carry out studies to support actions for quality production, since fruit and vegetables dispose of a metabolism susceptible to alterations throughout the production process until consumption.
