Lipid and protein oxidation in Cyprinus carpio muscle by environmentally relevant concentrations of glibenclamide

Parameters such as carbonylated proteins, lipid peroxidation, total sulfhydryl content, water holding capacity, pH, electrophoretic profile, and texture profile analysis were determined.
