The glucose content of rapeseed oil was the highest and soybean oil was the lowest. Soybean oil samples had the highest creatine content and the corresponding creatinine content was also the lowest. HAAs also showed an increasing trend with the increase of roasting time and temperature, and five vegetable oils to some extent inhibit the formation of HAAs in actual foods (except PhIP). The Journal''s basis is nutrient composition, with increasing emphasis on bioactive non-nutrient and anti-nutrient components. Papers must provide sufficient description of the food samples, analytical methods, quality control procedures and statistical treatments of the data to permit the end users of the food composition data to evaluate the appropriateness of such data in their projects.
