以脱脂瓜子仁粉为原料,研究了提取和沉淀法制备浓缩蛋白的最佳工艺条件。用蒸馏水、盐或碱性溶液提取浓缩蛋白。碱液提取率最高,为84.5%。体外酶法测定该蛋白浓缩物的消化率为90.8%。该蛋白富含赖氨酸6.35%,但含硫氨基酸如蛋氨酸0.27%、胱氨酸0.33%等含量较低。该分离蛋白具有良好的搅拌和乳化特性以及吸水和吸油性能。
