Termites had the highest percentage of crude protein (58.99%) and crude fiber (7.09%). Proximate composition values obtained for edible insects sampled for this work were all significant(P<0.05) except for Crude Protein. It is therefore recommended that more Termites (Macrotermes nigeriensis) should be consumed for protein and crude fat (lipid) derivation. 摘要

本研究对扎里亚一些食用昆虫的近似组成进行了评价。本研究以蟋蟀(Branchytropes memberanacoeus)、金龟子(Helicropris angulifera)、白蚁(Macrotermes nigeriensis)、小蚱蜢(Zonocerus variegatus)和大蚱蜢(Kraussaria angulifera) 5种可食昆虫为研究对象。蟋蟀种类的水分和灰分最高,分别为4.18%和11.62%。大蚱蜢的碳水化合物含量最高(34.08%)。白蚁的粗蛋白质和粗纤维含量最高,分别为58.99%和7.09%。除粗蛋白质外,各食用昆虫的近似组成值均显著(P<0.05)。因此,建议食用更多的白蚁(Macrotermes nigeriensis)来获取蛋白质和粗脂肪(脂质)。白蚁的脂质含量高于鸡(1.5%)和鱼(2.7 ~ 5.0%)。
