The results showed that the higher the addition of red spinach, the water, Fe, and vitamin C content increased, while the ash content, protein, fat and energy values decreased. The results of the organoleptic quality assessment analysis showed that the higher the percentage of addition of red spinach, the percentage of panelists acceptance of color, aroma, and taste decreased, but the percentage of panelists acceptance of texture increased. The best treatment assessment shows that the P2 treatment level can be recommended as the best treatment level. 摘要

本研究旨在分析红菠菜或红blum替代凤尾鱼块或Engraulidae鱼条对化学品质、能值和感官品质的影响,以预防青春期少女贫血。CRD 4个处理水平,每个处理水平重复3次。灰分、铁和维生素C含量的统计分析采用单向方差分析(One Way Anova),置信水平为95%;水、蛋白质和脂肪含量的数据分析采用计算值法(computational Value);碳水化合物含量的数据分析采用差分法(by difference);能量值的数据分析采用阿特沃特法(Atwater);感官质量的数据分析采用Kruskal Wallis法,置信水平为95%。结果表明,红菠菜添加量越高,水分、铁和维生素C含量越高,灰分含量、蛋白质、脂肪和能量值越低。感官质量评价分析结果表明,红菠菜添加比例越高,评审员对色、香、味的接受度越低,对质地的接受度越高。最佳处理评价表明,可推荐P2处理水平为最佳处理水平。P2治疗水平可作为预防少女贫血的主要动物配菜。
