Abstract

Control of the safety of specialized food products (SFP) as an actively developing market segment requires constant attention of researchers due to previously unknown risks, which makes it important to develop new approaches to solving this problem. The main factors infl uencing the SFP safety assessment are considered, and the advantages of several promising methods of instrumental analysis are characterized.
