The methods for determining the glycemic index in vivo and in vitro were used for making comparisons. The object of the study was a multigrain carbohydrate and protein mixture obtained by a modifi ed complex technology for processing raw materials. As a result of the research, it was found that the values of GI in vivo and GI in vitro of the carbohydrate and protein mixture do not coincide. It was shown that the determination of GI in vitro can be used as an operational method of quality control of new products in the scheme of technochemical production control.
