Thermal treatment bath with water temperature 55oC has been modelled for CPC antimicrobial properties investigation. Broil- er carcasses thermal treatment exposition has been 180 s. CPC disinfecting properties have been investigated at the base of “Methods of disinfecting matters laboratory investigations and tests for its effectiveness and safety evaluation” guide. CPC solutions effect has been studied on water micro flora in the bath for thermal treatment and on carcass- es feather and skin micro flora. It has been established that 0.1 to 0.15% CPC addition to water in thermal treatment bath in soft scalding mode) gives the possibility to reduce the content of QMAFAnM to single colonies and to inacti- vate coli group bacteria (СGB) in scalding water.
