摘要

在家禽初级加工部门使用浸没池是合理的。结果表明,在家禽屠宰部门使用过氧乙酸含量为0.07%的工艺辅助液,在脱毛10 s、溶液温度为35±2℃的条件下,脱毛后胴体表面受精率降低34.7%,在冷却9 s、溶液温度为9±1℃的条件下,冷却浴前受精率降低48.34%。额外的抗菌剂处理不会改变其感官品质,除了表面弱漂白。
