Hydrodynamics and Structural Organization of Polysaccharides in Aqueous Solutions of Gelatin 明胶水溶液中多糖的流体动力学和结构组织

The study is aimed on the dynamics, structure and interactions in binary systems based on gelatin and one of two polysaccharides, κ-carrageenan and sodium alginate, by means of NMR and IR spectroscopy techniques. The gelation temperatures are determined as well as molecular structure of studies systems is characterized.

利用核磁共振和红外光谱技术研究了明胶与κ-卡拉胶和海藻酸钠两种多糖中的一种的二元体系的动力学、结构和相互作用。测定了胶凝温度,并对研究体系的分子结构进行了表征。
