サトイモ(Colocasia esculenta (L) Schott)の熱水可溶性多糖の部分構造 ―親芋について― 芋头(Colocasia esculenta (L) Schott)的热水可溶性多糖的部分结构——关于芋头。

10月26日採取の親芋の熱水可溶性多糖をセファデックスG-100およびDEAE-セファデックスを用いて分画し,熱水可溶性多糖に多く含まれているグルコースの結合様式について,メチル化分析,スミス分解,デキストラナーゼ(Penicillium)による分解などを行い検討した. (1) ゲルろ過により親芋熱水可溶性多糖は,3つの画分に分画され,さらに,イオン交換クロマトグラフィーにより最も分子量の大きい画分は3つの画分に,中間の分子量画分および最も分子量の小さい画分はおのおの2つの画分に分画された. (2) イオン交換クロマトグラフィーで,非吸着画分に分画された3種の多糖について構成糖を調べたところ,いずれも主たる構成糖はグルコースであり,メチル化分析の結果では,主なメチル糖として,グルコースの→6結合を示す2, 3, 4-トリ-o-メチル-D-グルコースが得られた.また,スミス分解により,主な生成物として,グリセロールが得られ,メチル化分析の結果を支持した. (3) 上記の多糖にデキストラナーゼ(Penicillium)を作用させたところ,いずれも酵素の分解を受け,分解生成物として,イソマルトースが確認され,これらの多糖に含まれるグルコースが,α1→6結合をしていることが示唆された.
10月26日采集的亲芋热液可溶性多糖使用sefadex G-100和DEAE- sefadex进行分离,对热液可溶性多糖中富含的葡萄糖结合方式进行甲基化分析,史密斯分解,得出利用激酶(Penicillium)进行分解等研究。通过凝胶过滤,亲芋热水可溶性多糖被分成3个图层,通过离子交换色谱法,分子量最大的图层分成3个图层,中间的分子量图层和分子量最小的图层分别分成2个图层。被分成了几个部分。(2)通过离子交换色谱法,对非吸附画分的3种多糖的构成糖进行了调查,结果发现主要的构成糖都是葡萄糖。甲基化分析结果显示,主要的甲基糖是葡萄糖的→6结合所示的2,3,得到了4- trio -甲基-D-葡萄糖。另外,通过史密斯分解,得到了作为主要生成物的glycerol,甲基化分析结果支持。将解stranase (Penicillium)作用于上述多糖时,均受到酶的分解,作为分解生成物被确认为异麦芽糖,这些多糖中含有的葡萄糖以α1→6结合。得到了暗示。

Odor of cooked japanese adzuki beans 煮熟的日本赤豆的气味

(1) アズキを煮熟した際感じられる独特の甘く香ばしいにおいについて検討する目的で,北海道十勝産のアズキのにおい濃縮物を連続水蒸気蒸留抽出法にて得,シリカゲルカラムクロマトグラフィー, GLCおよびGC-MS分析により,各種におい成分を検討した. (2) におい濃縮物は甘く香ばしいアズキらしいにおいを有しており, 0.8~0.9mg%の収率であった.音更シュウズ,ハヤテショウズの2品種のにおい成分を比較したが,においの構成成分およびその量比に顕著な違いは認められなかった. 2品種のにおい濃縮物,および音更ショウズのにおい濃縮物のシリカゲルカラムクロマトグラフィーによって得られた各画分を分析した結果,あわせて70化合物を同定および推定した.それらは,炭化水素14種,アルコール22種,カルボニル化合物15種,カルボン酸2種,フェノール7種,フラン5種,ラクトン2種,含窒素化合物3種であった. (3) 上記のにおい物質のうち,豆臭を有する1-hexanol, 3-methyl-1-butanolなどのアルカノール,甘いにおいに寄与すると考えられる芳香族アルコール,フラン,ラクトン,甘い香気を増強すると考えられるフェノール化合物,および,含有量が多くカラメル様芳香を有するmaltolが,アズキの煮熟臭成分として重要であると考えられた.とくに,アズキの特徴的な甘いにおいには,maltolが大きく関与していることが明らかとなった.
为了探讨煮熟红豆时所感受到的独特的甜香气味,用连续水蒸气蒸馏提取法得到北海道十胜产的红豆气味浓缩物。通过GLC及GC-MS分析,研究了各种气味成分。(2)气味浓缩物具有甜香的红豆气味,收率为0.8 ~ 0.9mg%。比较了音更树、隼手树两个品种的气味成分,气味的构成成分及其量比未发现显著差异。对2个品种的气味浓缩物,以及音更少的气味浓缩物的硅凝胶,通过无色谱法得到的各图像进行分析的结果,共鉴定并推测出70种化合物。22种醇、15种羰基化合物、2种羧酸、7种苯酚、5种呋喃、2种内酯、3种含氮化合物。(3)上述气味物质中,具有豆味的1-hexanol;3-methyl-1-butanol等的烷烃,对甜香味儿有贡献的芳香族醇,呋喃,内酯,增强甜香味儿的酚化合物,以及,含量多的混合物具有样芳香的maltol,被认为是红豆煮熟臭的重要成分。特别是红豆的特征的甜气味,maltol有很大的关系。

This study was conducted to investigate the effects of green tea made from leaves incubated in an anaerobic condition (Gabaron tea) on the blood pressure of spontaneously hypertensive rats (SHR). No difference was found in the mean body weight of the control groups (first group, fed on water; second group, fed on ordinary green tea) and the experimental group (third group, fed on Gabaron tea) throughout the test period. The mean blood pressure of the three groups was identical at 160 mmHg in the pre-test period. The mean blood pressure of the experimental group was 158 mmHg, whereas the control groups shared 163_??_167 mmHg one week after the experiment started. The blood pressure of the experimental group was significantly lower than pressures of the control groups (P<0.01). In all groups, the mean blood pressure increased gradually from 10 to 20 weeks of age. The mean blood pressure of the experimental group was about 150 mmHg, and those of the control groups reached 175_??_180 mmHg. The mean blood pressure of the experimental animals was 14_??_17% lower than the pressures of the control animals at 20 weeks of age (P<0.01). The hypotensive effect on SHR fed the Gabaron tea infusion disappeared when the animals were returned to ordinary green tea intake at 20 weeks of age.

HPLC Analysis of Carbohydrates in Two Red Tide Phytoplanktons (Chattonella antiqua and Heterosigma akashiwo) 两种赤潮浮游植物(古chatonella antiqua和赤谷杂藻)中碳水化合物的HPLC分析

The composition of water-extractable cell wall and extracellular carbohydrates of Chattonella antiqua and Heterosigma akashiwo from the Seto Inland Sea were analyzed by high performance liquid chromatography. Both planktons produced the largest amount of carbohydrate in the stationary phase of culture. Polysaccharides (M. W. < 1500) were the major carbohydrates of both phytoplanktons.
