Effect of Maillard reaction with xylose, yeast extract and methionine on volatile components and potent odorants of tuna viscera hydrolysate 木糖、酵母提取物和蛋氨酸美拉德反应对金枪鱼内脏水解液挥发性成分和强效气味的影响

The aim of this research was to enhance the flavor of visceral extracts from skipjack tuna. Flavor precursors and the optimum condition for the Maillard reaction were determined. The flavor extract was prepared from the tuna viscera using Endo/Exo Protease controlled in 3 factors; temperature, enzyme amounts and incubation time. The optimal condition for producing tuna viscera protein hydrolysate (TVPH) was 60 ℃ , 0.5% enzyme (w/w) and 4-hour incubation time. TVPH were further processed to tuna viscera flavor enhancer (TVFE) with Maillard reaction. The Maillard reactions of TVFE were conducted with or without supplements such as xylose, yeast extract and methionine. The Maillard volatile components were analyzed with gas chromatography-mass spectrometry. Sixteen volatiles such as 2-methylpropanal, methylpyrazine, 2,5-dimethylpyrazine, dimethyl disulfide and 2-acetylthaizone were newly formed via Maillard reaction and the similarity of volatile contents from TVPH and TVFE were virtualized using Pearson’s correlation integrated with heat-map and principal component analysis. To virtualize aromagram of TVPH and TVFE, odor activity value and odor impact spectrum (OIS) techniques were applied. According to OIS results, 3-meth-ylbutanal, 2-methylbutanal, 1-octen-3-ol 2,5-dimethylpyrazine, methional and dimethyl trisulfide were the potent odorants contributed to the meaty, creamy, and toasted aroma in TVFE.

Diverse and predominantly sub-adult Epinephelus sp. groupers from small-scale fisheries in South Sulawesi, Indonesia 来自印度尼西亚南苏拉威西岛小规模渔业的多种和主要的亚成鱼石斑鱼

Groupers (Family Epinephelidae) are commonly caught in data-poor small-scale multi-species fisheries for sale on both export and domestic markets. This study presents data on the species composition and size/life-stage structure of Epinephelus spp. groupers caught by small-scale fishers and sold locally in the Indonesian province of South Sulawesi. Data were collected from fishing ports and local markets at 12 sites representing the three seaways around South Sulawesi (Makassar Strait, Flores Sea, Gulf of Bone). Each specimen (n = 3,398) was photographed alongside an object of known length, and total length (TL) was obtained using the Rapid Scaling on Object (RASIO). Of the 23 species identified, four ( Epinephelus areolatus , Epinephelus ongus , Epinephelus quoyanus , and Epi-nephelus fasciatus ) collectively comprised 69% of the catch, while the 13 least abundant species contributed less than 5%. The catch was dominated (67%) by the subadult life-stage, with just under 20% in the adult class. Juveniles dominated the catch of Epinephelus fuscoguttatus , a valuable export commodity. Observations of early maturity as well as the sizeable gap between length at first capture ( Lc ) and length at first maturity ( Lm ) indicate recruitment overfishing of most species, with the notable exception of Epinephelus rivulatus . The proportion of adult fish was low (≈5%–30%) for the twelve most abundant species ( E. areolatus , E. ongus , Epinephelus quoyanus , E. fasciatus , Epinephelus coioides , Epinephelus faveatus , Epinephelus sexfasciatus , Epinephelus maculatus , Epinephelus bleek-eri , Epinephelus corallicola , E. fuscoguttatus , Epinephelus polyphekadion ). For two moderately abundant species ( E. faveatus and E. malabaricus ), TL < Lm for all specimens. The limited data available indicate spawning ratio is lower than reported from deep-water fisheries of E. areolatus and E. coioides . The results call for targeted research to fill knowledge gaps regarding the biology and ecology of groupers exploited mainly for domestic markets; highlight the need for species-level data to inform management policies such as minimum legal size regulations; and can contribute towards species-level status assessments.

Additive biocomponents from catfish by-products enhance the growth of shrimp Litopenaeus vannamei 鲶鱼副产品中添加的生物成分促进凡纳滨对虾的生长

The rapid expansion of shrimp production requires a huge amount of protein sources from soybeans and wild-caught fishmeal; both are becoming a shortage. Meanwhile, catfish production and processing is a giant industry in Vietnam, which produce hundred thousand tonnes of protein-and lipid-rich by-products, annually. Using catfish by-products to gradually replace the traditional protein sources in shrimp aquaculture may bring triple benefits: 1) reducing pressure on wild fish exploitation for fish-meal, 2) reducing the environmental impacts of catfish by-products, and 3) increasing the value and sustainability of aquaculture production. In this study, we used catfish by-products to produce fish protein hydrolysate (FPH) and nano-hydroxyapatite (HA) as additives in feed for Pacific white shrimp ( Litopenaeus vannamei ). The supplement mixture of FPH and HA was added into the commercial diet (Charoen Pokphand Group [CP], 38% protein, and 6.5% lipid) to reach 38%, 38.5%, 40%, 43%, and 44% of the crude protein content. The survival and growth of shrimps were weekly assessed to day 55. The results showed that the shrimp growth was highest at 43% crude protein content in the feed as indicated by an increase of 124% and 112% in shrimp weight and length, respectively, compared to the commercial reference diet. No negative effects of adding the mixture of FPH and HA on the water quality were observed. Vibrio density was lower than 6.5 × 10 3 CFU/mL, which is the lowest Vibrio density negatively affecting the shrimp growth and development. These findings indicate that the mixture of FPH and HA are promising additive components in feed for post-larval shrimp L. vannamei diets.

Current fishery status in Ethiopian reservoirs: challenges and management 埃塞俄比亚水库的渔业现状:挑战和管理

Ethiopia is branded as the Water Tower of Africa because of its abundant inland water bodies that may be used sustainably to boost the economy. This review article’s goal is to examine the current status and future potential of Ethiopia’s fisheries, with a special focus on reservoirs. There are 200 known fish species (194 native, 40 endemic, and 11 exotic) in in Ethiopia’s inland water. Ethiopia’s fish production has increased by a factor of more than five in the past three decades (3,500 tons in 1983 to 15,681 tons in 2000 and 18,058 tons in 2010). However, fish produced in reservoirs is too low (8,059 t/year). The current fish harvests from reservoirs are significantly below the predicted potential yield, accounting for only 35% of the calculated fish production capacity. In this review, 14 potential reserves were revealed. A total of 48 fish species have been reported in these, of which 26 species (or around 54%) are present in Alwero reservoir. 19 of the 48 species that have been officially recognized belong to the Cyprinidae family and made up nearly 40% of the fish population in Ethiopian reservoirs. There has been, however, a decline in the productivity of Ethiopia’s reservoir fish. Hence, actively start fishing in the numerous reservoirs that have been neglected yet, link the potential of fisheries and the benefits of the fish farming supply chain, let’s begin building several other reservoirs similar to the Grand Ethiopian Renaissance Dam and beginning mechanized-based fish harvesting.

This study aimed to know the response of deep-sea squid Sthenoteuthis oualaniensis to the light colors of the artificial bait. This experiment used the commercial artificial flashlight baits commonly sold in the fishing shop. The bait has several different light color combinations. The light colors were modified into several light colors by inactivating certain colors and used as treatments. The study is expected to be able to find flashlight bait’s most effective color for squid fishing. We applied red-green, green, blue, and commercial bait lights in this study. Each treatment has 3 replications. The effect was expressed as the amount of squid caught. Data were analyzed by one-way analysis of variance. Results showed a significant effect on the number of squid catches. There was significantly different squid catches among the treatments. It indicates that this artificial flashlight bait could be developed to maximize squid catches. This finding can be used for the local fishermen’s income and the squid fisheries development.

Food and feeding habits of large cyprinid fishes ( Labeobarbus intermedius , Labeobarbus nedgia , and Labeo forskalii ) had been investigated in the upper Blue Nile River, Ethiopia. Four sampling sites were selected and specimens were sampled during the post-rainy (November 2016) and dry (March 2017) seasons by gillnets of 6 cm, 8 cm, 10 cm, 12 cm, and 14 cm mesh sizes. Totally 401 fishes were collected and about 30.4% (122) of the samples were documented with empty guts and 279 (69.6%) of them were with non-empty guts. The whole contents of all non-empty gut specimens were taken, labeled, and preserved using a 5% formaldehyde solution for further analysis. In the laboratory, gut contents were examined and identified using compound and stereo microscopes. The relative importance of different food items in the diet compositions was analyzed using a frequency of occurrence and volumetric analysis. During the post-rainy season, insects and phytoplankton were mostly ingested as food items. However, during the dry season, phytoplankton was the most important food item in the diet of all cyprinid fishes of the river. Based on current study results, L. intermedius and L. nedgia might be omnivores in their diet but Labeobarbus forskalii seemed to be detritivorous.

It is important to understand the biological aspects of fish for fishing management. This study was conducted from February through October 2021. A total of 1,629 fishes were collected using different fishing gears. The length-weight relationship is a power curve for all fishes and showed a significant ( r 2 > 0.8). All fishes revealed a negative allometric growth pattern except Labeobarbus intermedius . Oreochromis niloticus (1.714 ± 0.009) was found in better condition than other fish species (analysis of variance [ANOVA], p < 0.05). The length at maturity was 24.0 cm and 25.4 cm total length (TL), 28.9 cm and 28.2 cm fork length, and 53.2 cm and 57.5 cm TL for females and males of O. niloticus , L. intermedius and Clarias gariepinus , respectively. Fecundity was ranged between 100–947 eggs/g with absolute fecundity (AF) of 468–3,832 eggs, 200–1,000 eggs/g with AF of 2,752–136,420 eggs, and 505–900 eggs/g with AF of 2,000–6,404 eggs for O. niloticus , C. gariepinus , and L. intermedius , respectively. Their respective mean fecundity was 1,490 ± 91, 23,330 ± 5,070, and 3,096 ± 273 eggs, respectively. Mean fecundity revealed a significant variation between size classes and species (ANOVA, p < 0.05). The fecundity length and fecundity-body weight relationships except ( O. niloticus ) of fishes were curvilinear while the gonad weight (GW)-fecundity relationship was linear for all fish species. The fecundity was moderately associated with increasing length than body weight, and GW for all fishes ( r 2 > 0.6). In conclusion, a tangible management setup is required to sustain the use of fish in the reservoir.

The Pacific abalone, Haliotis discus hannai , is a highly valued and industrially important aquaculture species with growing de-mands of the expanding abalone aquaculture industry. To explore the feasibility of using the brown alga, Sargassum horneri , as a potential substitute for abalone feed, it is important to identify the feed preference and attractant effect of S. horneri on Pacific abalone. Our experiments indicated that the feeding-associated movement of abalone could be detected using a video tracking system under indirect illumination with dim red light. To further analyze the attraction potentials of various test materials, preference analysis was performed using Avicel-coated glass plates with ground powders of various seaweeds (e.g., S. horneri , Saccharina japonica , and Undaria pinnatifida ) and commercial abalone feed, together with coffee waste. Heat map analysis indicated greater attraction by the kelp S. japonica than by S. horneri and commercial feed, which showed similar preference levels. Feeding preference based on the area of Avicel eaten by abalone showed a significant preference for U. pinnatifida over S. horneri (feeding area: 68.6 ± 20.1% vs. 37.5 ± 22.4%, p < 0.05). Additionally, the feeding area was significantly greater for plates with S. japonica than for plates with S. horneri (44.0 ± 16.6% vs. 22.6 ± 15.4%, p < 0.05). There was no significant difference in feeding area between commercial feed and S. horneri (31.7 ± 11.6% vs. 31.6 ± 20.2%, p > 0.05). The methanol extracts attracted abalone in the following order: U. pinnatifida > S. horneri > S. japonica > commercial feed > coffee waste. To determine the attractive effects of the components of methanol extracts, mixtures of methanol extracts of commercial feed with increasing amounts of S. horneri were examined. The results showed a significant increase in feeding preference upon addition of S. horneri up to 50% and 75%, suggesting its potential for use as an appetite-enhancing feed additive. This study identified conditions that can be successfully used to monitor the movement of Pacific abalone; the results of preference analysis confirmed that abalone exhibited similar attraction and feeding preference for S. horneri , compared with commercial feed.

An overview bioactive compounds on the skin of frogs (Anura) 蛙类皮肤上生物活性化合物的研究进展

The robust development of frog farming offered high economic benefits but created a large waste residue of frog bones and skin that received little attention. Over the years, inedible by-products have often been processed into biomolecules of potential value and environmental benefits, such as collagen, gelatin, and bioactive peptides. An overview of bioactive compounds on frog skins from various countries indicated that brevinin was the most abundant biological peptide found in frog skin. Other remaining compounds also possessed their highlighted activities, including antibacterial, stimulating insulin release and gastric hormone release, anti-cancer, and neuroregulatory. Notably, various components have been analyzed in the structure and sequence to give meaningful insight into clustering components related to their biological activity. This review may create a source of raw materials for the developmental research of by-products from frog skin and concomitantly reduce environmental pollution.
