Cardamom is popularly known as ‘Queen of Spices’ due to its pleasant aroma and taste. It is widely used in India since ancient times. Cardamom contains steam-volatile oil, fixed oil, pigments, proteins, cellulose, pentosans, sugars, starch, silica, calcium oxalate and minerals. The aroma and flavor of cardamom are obtained from the essential oils which are composed of mainly α-terpinyl acetate and 1,8-cineole. Cardamom has excellent medicinal properties such as antiseptic, carminative, digestive, diuretic, stimulant, stomachic, tonic and antispasmodic, antimicrobial and anti-inflammatory activities. Mainly three forms of cardamom viz. whole, decorticated seeds, and fully ground into powder are used as flavoring agent in dairy and food industry. Dairy farming is one of the important components of irrigated ecosystem and plays a major role towards sustaining agricultural livelihoods. In the present study, a detailed survey was conducted regarding the livestock potentials of the farmers in irrigated ecosystem in relation to the socio-economic status. Maintenance of dairy and related economics was evaluated for each socio-economic class as well as the constraints perceived by each group of farmers. While in case of large and medium farmers, absence of proper and organized marketing facility is one of the major constraint, lack of infrastructural facilities like breeding, health care etc. are major setbacks for small and marginal farmers. However, dairy forms an important livelihood component for the farmers especially for small and marginal classes in the irrigated ecosystem. Lactation persistency, an economically important trait for dairy animal, can be defined as the capacity of a cow to continue milk production at a high level after the peak yield. High persistent cows are expected to have higher lactation production, longer productive life and considered as efficient producers. Moreover, lactation persistency has a great influence on the health, reproduction and feed costs of dairy cows. Different environmental factors viz., season of calving, period of calving, parity, genetic group, age of calving, lactation length, peak yield, were reported to have significant effect on the lactation persistency of dairy cattle. The heritability of lactation persistency varied according to the method of calculation of persistency and the method of heritability estimation. Low positive genetic correlation between persistency and milk yield indicated that selection for increased milk yield would slightly improve persistency. To ensure that cows persistent for milk production have good reproductive performance, it is important to study the relationship between persistency and reproductive traits. Various researchers have reported unfavorable relationship between persistency and reproductive traits. Food is related to health and well being. Good food is well balanced that gives our body all that it needs. It is directly linked with growth but adulteration and malnutrition affects youngster’s growth. Food adulteration is a common issue whereas the developing countries are at high risk because of lack of supervision and neglecting policies. Unfortunately, milk adulterants can cause serious health problems such as allergy, renal calculi, and stomachitis. Today there is science era, so recent development in these detection techniques has been reported that included various tests to identify specific adulterant. This article creates awareness among us towards some commonly used adulterants and their simple detection techniques to get the power to make right choice to select their healthy food. Bull is known to be half of the herd. As bull contribute large number of progenies to the next generation as compared to females so determining the potential fertility of the bull is much more important than determining the fertility of any individual cow. It becomes critical to study and analyse the breeding potential of a bull before breeding season for getting best out of progeny. Breeding soundness evaluation (BSE) is a practical method to predict bull’s potential fertility. Evaluation should be conducted on every bull at least 30–60 days before each breeding season to allow enough time for replacement of deferred or unsatisfactory bulls. Parameters have been shown to be the most reliable and repeatable in nature and consist of (A) History; (B) Physical examination; (C) Measurement of scrotal size; and (D) Semen evaluation for sperm motility (movement) and morphology (structure and shape). Along with all these the accessory sex glands such as vesicular glands, ampullae, and prostate should be looked for evidence of inflammation, adhesions, fibrosis or enlargements. New techniques such as Ultrasonography, Pelvic measurement, Trichomoniasis testing, Virgin Heifer test can also be used for BSE. Molecular genetics also plays an important role as, with new advancements it helps us to investigate and identify major genes which are responsible for various diseases in animals. Genes affecting bull fertility can also be identified. Molecular tools such as RFLP, RAPD, Mini-satellites, AFLP’s can also be used. BSE every year will help farmer in identifying infertile and subfertile and gain maximum from dairy farming. Data utilized in this study were obtained from the farm records of Al-Fayet project. The dairy farm is located in Gandatow, Shendi, River Nile State, as the first farm kept pure Friesian cattle. The main objectives of this study were to evaluate the productive performance of Friesian dairy cows and investigate the factors affecting those productive traits. A total of 138 performance records of Friesian cattle were used; covering the period from 2011 to 2014. The investigated data included total milk yield, lactation length and daily milk yield. The collected data were classified according to the parity number, season and year of calving. The data were analyzed using SPSS computer program. Analysis of variance was performed and means were separated using Duncan’s multiple range test. The results showed that overall means of total milk yield, daily milk yield and lactation length were 5604.2 kg, 14.3 kg and 378.2 days, respectively. The total and daily milk yield were significantly (P≤0.05) affected by parity order, season and year of calving. On the other hand, year and season of calving had an insignificant (P>0.05) influence on lactation length, while the trait was significantly (P≤0.05) affected by parity order. The study concluded that the productive performance of the pure Friesians cows raised in River Nile State, was better and higher than those estimates obtained from previous reports in Sudan. The productive performance of pure Friesian cows could be improved by adoption of proper management, feeding and breeding programs. The main objectives of this study were to evaluate the productive performance of Friesian dairy cows and investigate the factors affecting those productive traits. A total of 138 performance records of Friesian cattle were used; covering the period from 2011 to 2014. The investigated data included total milk yield, lactation length and daily milk yield. The collected data were classified according to the parity number, season and year of calving. The data were analyzed using SPSS computer program. Analysis of variance was performed and means were separated using Duncan’s multiple range test. The results showed that overall means of total milk yield, daily milk yield and lactation length were 5604.2 kg, 14.3 kg and 378.2 days, respectively. The total and daily milk yield were significantly (P≤0.05) affected by parity order, season and year of calving. On the other hand, year and season of calving had an insignificant (P>0.05) influence on lactation length, while the trait was significantly (P≤0.05) affected by parity order. The study concluded that the productive performance of the pure Friesians cows raised in River Nile State, was better and higher than those estimates obtained from previous reports in Sudan. The productive performance of pure Friesian cows could be improved by adoption of proper management, feeding and breeding programs. The present study was conducted to formulate a recipe and develop a method for manufacture of Moringa lassi containing Moringa pod powder (MPP) as a value added ingredient. Moringa lassi was prepared from dahi made from standardized milk (4.5% fat/9.5% MSNF). The effect of varying level of total milk solids in lassi (6 to 10% w/w of lassi), acidity of dahi (0.6 to 0.9% LA) and level of MPP (1.25 to 2.00% w/w of lassi) and their interactions on physico-chemical and sensory parameters of the product were assessed using Response Surface Methodology. Based on surface responses, the optimal levels were: 10.0% TMS in lassi, 0.8% LA acidity of dahi and 1.63% MPP. Using the optimized levels, the developed product was found to be an "excellent source of calcium" providing 25% DV and “good source of iron and potassium and protein” providing 12, 10 and 10% DV respectively. Moreover, the product was found to contain considerable amount of Vitamin C (7% DV) and fibre (5% DV). These nutrients could be supplied by one serving size (250 g) of Moringa lassi. MALDI-TOF MS is a soft ionization technique suitable for analysis of peptides, proteins, glycoproteins, oligosaccharides and oligonucleotides etc. In dairy sector, it can be used to analyze milk proteins, to identify adulteration in milk, isolation of phospholipids, characterization of proteins and enzymes of the microorganisms used in manufacture of cheese and other fermented products. In food industry, it can be used for evaluation and determination of fructo-oligosaccharides, inulins, certain pigments and flavor compounds present in different foods. This technique has found applications in a variety of disciplines including proteomics, glycomics, dairy, food, chemistry, biochemistry, microbiology, and physics. The purpose of this review is to summarize the contribution of the studies already performed with MALDI-TOF MS concerning dairy and related sectors.
