A review on pale, soft, and exudative (PSE)-like zones in pork: current knowledge on underlying factors and identification of knowledge gaps for further research 猪肉中苍白、柔软和渗出(PSE)样带的综述:当前对潜在因素的认识和对进一步研究的知识空白的识别

This review examines the multi-factor problem of pale, soft, and exudative (PSE)-like zones in pork causing slicing losses in valuable cuts. Increasing slaughter weight, suboptimal chilling regime, effects of post-slaughter pH and temperature on glycolysis, and protein denaturation seem to be important factors connected to water-holding and colour attributes. The presence and expression of the n allele on the RYR1 gene and the RN – allele on the PRKAG3 gene increase PSE incidence. Studies involving tissue characterization of destructured muscles have associated oxidative stress and apoptotic processes with the progression of ‘PSE-like zones’. Classical PSE meat shows many histological and biological similarities with PSE-like zones, particularly in protein characteristics, but there are differences in underlying physiological mechanisms limiting PSE-like zones to deep semimembranosus muscles. Developing early detection methods, efficient carcass handling, mapping underlying physiological mechanisms, and determining genetic background are important future measures to eliminate PSE-like zones and improve pork quality.

The objective of this study was to investigate the genetic polymorphisms and transcript levels of antioxidant and metabolic markers for diarrhea monitoring in Holstein dairy calves. For DNA and RNA extraction, blood samples were taken from 100 female calves (50 with diarrhea and 50 appearing healthy). DNA sequencing and real time PCR for and metabolic genes were performed to identify genetic variants linked to diarrhea susceptibility. Results revealed that there were nucleotide sequence variations in the investigated genes between healthy and diarrheal calves. Keap1, HMOX1, CMPK2, ASPG, FPGT, TNNI3 K, and LPCAT1 were considerably more highly expressed in diarrheic calves than resistant ones. The Nrf2, PRDX2, and PRDX6 genes, however, produced a different pattern. This study provides a practical control strategy to lessen newborn diarrhea in Holstein dairy calves and emphasizes the significance of nucleotide variations along with antioxidant and metabolic gene expression patterns as proxy markers of diarrhea susceptibility/resistance.

ABSTRACTIn 1977 the pectoralis major (breast) muscle mitochondrial content of domestic broiler chickens, Gallus gallus domesticus, was estimated at 4.1%. However, in the subsequent ∼45 years broilers have been further modified by sustained intensive genetic selection on feed conversion efficiency and breast muscle mass. With a view to understanding the metabolic implications of this historic selection – and also laying a foundation to better interpret current commercial performance – we quantitated the cellular bioenergetic structure of modern broilers. The breast muscle of 4 64 d old Ross308 broilers was subject to morphometric analysis based on transverse Transmission Electron Microscopy (TEM) images. This approach determined an average mitochondrial content, diameter and circularity ratio of 2.1%, 0.42 µm and 0.72, respectively. Broiler breast mitochondrial content has thus approximately halved in the last 45 years and represents one of the lowest contents recorded for the muscle of any eukaryotic species.KEYWORDS: Musclemitochondriachicken Disclosure statementNo potential conflict of interest was reported by the author(s).

The white blood cells (except heterophil) increased and red blood cells and hematocrit decreased by CurNPs supplementation. The serum enzyme activity, cholesterol and triglyceride reduced and protein increased by CurNPs supplementation. Also, The CurNPs, increased relative weight of spleen and immune indices concentrations in serum. Moreover, The CurNPs addition improved gut morphological traits in the Jejunum. CurNPs supplementation. This study compared animal performance and enteric methane (CH4) emissions from dairy cows in a part-time grazing (PTG) system in northern Sweden. Twenty-four Nordic Red dairy cows were allocated to one of two treatments: DAY (10 h daytime pasture access) or NIGHT (12 h night-time pasture access). The cows in each treatment received the same ad libitum partial mixed ration (PMR) indoors and ad libitum herbage allowance. Methane was recorded using two linked GreenFeedTM emissions monitoring (GEM) units, on pasture and indoors. Day or night grazing showed no statistical differences in estimated grass or PMR intake, milk production or daily enteric CH4 emissions. There was a rapid decrease in diurnal CH4 emissions (28%) when the cows were moved from indoors to pasture in both grazing treatments. Using two GEM units (indoor, outdoor) in combination improved the diurnal assessment of enteric CH4 emissions during PTG conditions in the mixed feeding system.

The cows in each treatment received the same ad libitum partial mixed ration (PMR) indoors and ad libitum herbage allowance. Methane was recorded using two linked GreenFeedTM emissions monitoring (GEM) units, on pasture and indoors. Day or night grazing showed no statistical differences in estimated grass or PMR intake, milk production or daily enteric CH4 emissions. There was a rapid decrease in diurnal CH4 emissions (28%) when the cows were moved from indoors to pasture in both grazing treatments.
