Optimasi Substitusi Saus Tomat dengan Ekstrak Buah Semu Jambu Monyet pada Formulasi Bumbu Marinasi Steak 优化调味料中的番茄酱配番石榴果仁提取物

Ekstrak buah semu jambu monyet (EBSJM) sebagai bumbu marinasi menjadi salah satu aplikasi pemanfaatan jambu monyet di bidang pangan. Tujuan penelitian ini adalah menentukan level optimum EBSJM sebagai pensubstitusi saus tomat dalam formula bumbu marinasi ditinjau dari karakteristik fisikomikia dan hedoniknya. Empat level konsentrasi EBSJM dengan lima kali perulangan (0, 5, 10, dan 15%) dari proporsi saus tomat (v/v) ditetapkan dalam formula bumbu marinasi untuk menu steak. Produk bumbu steak untuk masing-masing formula selanjutnya dikarakterisasi fisikokimianya. Uji hedonik dilakukan dengan mengaplikasikan bumbu pada daging ayam yang diolah sebagai steak. Substitusi EBSJM pada saus tomat mempengaruhi karakteristik fisikokimia (viskositas, pH, kadar air, dan total padatan) bumbu marinasi dan karakteristik hedonik (rasa dan tekstur) pada steak sebagai hasil aplikasi dari bumbu tersebut. Viskositas dan total padatan makin meningkat sedangkan kadar air makin menurun pada substitusi lebih dari 5% (p<0,05). Penurunan pH bumbu makin bertambah seiring dengan penambahan substitusi hingga 10% (p<0,05). Uji hedonik menunjukkan substitusi 5% menghasilkan steak ayam yang paling disukai dari segi tekstur dan rasa (p<0,05). Substitusi saos tomat dengan EBSJM 5% menghasilkan produk bumbu marinasi untuk steak yang kental, asam, pekat dan paling disukai. Kata kunci : Ekstrak; bumbu; jambu monyet; marinasi Optimation on the Substitution of Tomato Sauce with Cashew Apple Extract in Formulation of Steak Marinade Seasoning ABSTRACTExtracts of cashew apple (EBSJM) as marinade seasoning is one of the applications of cashew apple utilization in the food sector. The decrease in seasoning pH increased in line with the addition of substitutions up to 10% (p<0.05). Hedonic tests showed a 5% substitution resulting in the most preferred chicken steak in terms of texture and taste (p<0.05). Analisis Fitokimia dan Uji Toksisitas Daun Leleng Merah (Graptophyllum pictum (L.) Griffith) dengan Metode Brine Shrimp Lethality Test 植物化学和病毒性试验用盐水虾试验

Penelitian ini bertujuan untuk menentukan total phenolic content (TPC), total flavonoid content (TFC), condensed tannin content (CTC) dan nilai toksisitas dari daun leleng merah. Daun leleng merah diekstraksi dengan metode maserasi dan dipartisi menggunakan pelarut n-heksana, etil asetat, dan air. Penentuan nilai TPC menggunakan metode Folin-Ciocalteu. Penentuan nilai TFC menggunakan metode AlCl3. Penentuan nilai CTC menggunakan metode vanillin-HCl. Penentuan nilai toksisitas menggunakan metode BSLT. Nilai TPC yang diperoleh pada fraksi n-heksana (FH), fraksi air (FA), dan fraksi etil asetat (FEA) daun Leleng Merah berturut-turut, adalah: 20,48; 31,7; dan 37,57 (mg/g). Nilai TFC diperoleh pada FH, FA, dan FEA berturut-turut, adalah: 0,64; 0,99; dan 1,27 (mg/g). Nilai CTC diperoleh pada FH, FA, dan FEA berturut-turut, adalah: 0,56; 2,17; dan 6,52 (mg/g). Nilai toksisitas diperoleh pada FEA, FA, FH berturut-turut, adalah: 21,93; 100,7; dan 117,22 (mg/L). FEA memiliki nilai toksisitas dan kandungan fitokimia tertinggi. Prediksi Struktur Tiga Dimensi Protein β-NGF (Nerve Growth Factor) Burung Merpati (Columba livia)

Protein β-NGF berperan dalam kelangsungan hidup sel neuron dan diferensiasi embrio aves yang diekspresikan oleh gen NGF. Informasi protein β-NGF telah diidentifikasi pada ayam dan masih terbatas dilaporkan pada merpati. Tujuan penelitian adalah memprediksi struktur tiga dimensi protein β-NGF merpati untuk menambah informasi karakter proteinnya. Protein target diperoleh dari server UniProt dengan kode akses B4ZE95. Prediksi struktur tiga dimensi dan karakterisasi protein β-NGF menggunakan server SWISS-MODEL dan program Chimera. Hasil analisis menunjukkan bahwa protein β-NGF merpati dan template memiliki nilai identity sebesar 89,91%, QMEAN 0,51 serta GMQE sebesar 0,44. Struktur tiga dimensi protein B4ZE95 memiliki  asam amino hidrofobik (Ile, Leu, Trp, Phe, Val, Ala, Gly, Met, Cys); karboksil (Glu, Ser, Asp); amina (Lys, Thr) dengan 83 ikatan hidrogen.Kata kunci: columba livia, chimera, protein β-NGF, swiss-model Three Dimensional Protein Structure Prediction of β-NGF(Nerve Growth Factor) on Pigeon (Columba livia)ABSTRACTThe β-NGF protein plays a role in the survival of neuron cells and differentiation of avian embryo which is expressed by NGF gene. Information of β -NGF protein was identified in chicken and it is still limited reported in pigeon. The purpose of this study is to predict the three-dimensional structure of pigeon β-NGF protein to add information about its protein character. The target protein is obtained from UniProt server with access code B4ZE95. The prediction of three-dimensional structure and characterization of β-NGF protein were carried out using SWISS-MODEL server and Chimera program. The analysis showed that pigeon β-NGF protein and template had identity of 89,91%, QMEAN 0,51 and GMQE of 0,44. The three-dimensional structure of the B4ZE95 protein has hydrophobic amino acids namely (Ile, Leu, Trp, Phe, Val, Ala, Gly, Met, Cys); carboxyl namely (Glu, Ser, Asp); amine namely (Lys, Thr) with 83 hydrogen bonds.Keywords: columba livia, chimera, protein β-NGF, swiss model

Penentuan Harga Premium Asuransi Tanaman Sagu di Kabupaten Luwu Menggunakan Copula FGM

Fokus utama penelitian ini adalah menghitung harga premium asuransi menggunakan Copula FGM. Adapun tujuan utama dari penelitian ini yaitu menentukan harga premium asuransi yang ideal untuk tanaman Sagu di Kabupaten Luwu. Penelitian ini merupakan penelitian terapan (applied approach) dengan menggunakan data kuantitatif untuk luas lahan dan hasil produksi Sagu di Kabupaten Luwu yang bersumber dari data Badan Pusat Statistik (BPS). Tahapan-tahapan yang dilakukan dalam penelitian ini dimulai dengan melakukan studi kepustakaan untuk mengkaji konsep dasar Copula dan konsep Copula FGM beserta sifat-sifatnya; mengumpulkan data kuantitatif luas lahan (X) dan hasil produksi Sagu (Y); mengukur dependensi antara luas lahan dan hasil produksi Sagu menggunakan Copula FGM; dan terakhir menentukan harga premium asuransi pertanian (crop insurance) yang ideal. ABSTRACTThis paper discusses solving the problem of rental costs in a Flowshop scheduling with n-jobs and m-Machines in small and medium-sized companies to minimize rental costs to be paid. The proposed method is the development of an existing method using several proven propositions. The method used is applied in a sandals company that rents 11 machines used to produce 6 types of products. ABUNDANCE AND DIVERSITY OF FISHES IN BAYAWAN RIVER, NEGROS ORIENTAL, PHILIPINES 菲律宾内格罗斯东部巴亚湾河鱼类的丰度和多样性

This study aimed to: 1) identify fish species found in Bayawan River; 2) determine fish abundance and species composition in three segments of  the river; 3) characterize physico-chemical and hydrological parameters of the river; and 4) correlate fish abundance and diversity with the physico-chemical and hydrological characteristics of Bayawan River.  The fishes of Bayawan River in Negros Oriental, central Philippines were assessed for three sampling months (December 2018-February 2019). Abundance and diversity of fishes were quantified in relation to physico-chemical and hydrological parameters. The data were analyzed using Shannon-Wiener Diversity Index (Hˈ), Margalef’s Index (species richness), Principal Component Analysis (PCA), and Canonical Correspondence Analysis (CCA). The Shannon-Weiner Diversity Index (Hˈ) across sampling months ranged from 2.3-3 showing a relatively diverse ecosystem. However, the number of species decreased from December 2018 to February 2019 (27 to 15 species). Twenty six (92.9%) of the fish species are marine species that spend only part of their life in freshwater while two species (7.1%) are truly freshwater species. Generally, the ichthyofauna consists of 28 species belonging to 20 families and were dominated by families Leiognathidae and Carangidae (14.3%). Most abundant species were Deveximentum megalolepis (125), Eubleekeria jonesi (107) followed by Oreochromis niloticus (48) and the rest were represented by 40 individuals and below. Penelitian ini bertujuan untuk mengevaluasi intensitas serangan akibat hama pemakan daun setelah aplikasi ekstrak daun kirinyuh pada tanaman sawi. Penelitian ini menggunakan rancangan acak lengkap (RAL) yang terdiri dari 4 perlakuan konsentrasi ekstrak daun kirinyuh yaitu K0 (kontrol) = 0 g/L air, K1  = 100 g/L air, K2 = 200 g/L air, dan K3 = 300 g/L air. Intensitas serangan diamati berdasarkan luas area daun yang dirusak oleh hama pemakan daun pada daun sawi setelah aplikasi ekstrak daun krinyuh. Hasil penelitian menunjukkan bahwa pemberian ekstrak daun kirinyuh berpengaruh nyata terhadap intensitas serangan pada tanaman sawi dan konsentrasi ekstrak daun kirinyuh yang dapat menekan serangan hama pemakan daun yaitu yang tertinggi pada perlakuan K3 (300 g/L air).Kata kunci: Tanaman sawi (Brassica juncea L.), intensitas serangan, tumbuhan kirinyuh (Chromolaena odorata) THE ATTACK INTENSITY DUE TO LEAF-EATING PESTS AFTER APPLICATION OF KIRINYUH (Chromolaena odorata L.) This study was used a completely randomized design consisting of 4 treatments of kirinyuh leaf extract concentration, namely K0 (control) = 0 g / L water, K1 = 100 g / L water, K2 = 200 g / L water, and K3 = 300 g / L water. The intensity of the attack was observed based on the area of leaf damaged by pest. Penelitian ini bertujuan untuk mengetahui padat penebaran yang cocok atau sesuai dalam mendukung pertumbuhan ikan nila. Analisis data yang digunakan yaitu ANAVA serta rancangan penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL). Meliputi benih ikan nila sebagai hewan uji yang dipelihara pada wadah plastik terdiri dari  3 perlakuan dan dan 3 kali ulangan yaitu (15 individu), (20 individu) dan  (25 individu). Hasil penelitian menunjukkan padat penebaran memberikan pengaruh terhadap pertumbuhan relatif dan biomassa benih ikan nila. Padat penebaran yang terbaik untuk mendukung pertumbuhan ikan nila adalah 15 individu perwadah sedangkan yang terendah adalah 25 individu perwadah. Mortalitas tertinggi terjadi pada padat penebaran (25 individu) sebesar 15,33 persen dan mortalitas yang paling rendah terdapat pada padat penebaran (15 individu) sebesar 0 persen.Kata Kunci : Ikan nila, padat penebaran, wadah terkontrol, pertumbuhan relatif. GROWTH OF OREOCHROMIS SEEDS (Oreochromis niloticus) IN VARIOUS STOCKING DENSITIES WHICH ARE MAINTAINED IN CONTROLLED CONTAINERS ABSTRACTThis study aimed to determine how much stocking density is suitable to support the growth of oreochromis. Analysis of the data used ANAVA and the design pattern used is a Complete Randomized Design (CRD). Test fish is oreochromis fish seeds that were kept in experimental containers consisted of 3 treatments and 3 replications, namely (15 individuals), (20 individuals) and (25 individuals). The results showed that the best stocking density that support the growth of tilapia was 15 individuals per container Plastic while the lowest was 25 individuals container Plastic, the studies results showed stocking density had an influence on the relative growth and biomass of oreochromis fish, the highest mortality occurred in treatment (density of 25 individuals) of 15,33 percent and the lowest mortality was in the (15 individuals) stocking density of 0 percent.Keywords: Oreochromis, stocking densities, controlled containers, relative growth.

Penelitian ini bertujuan untuk mengkaji respon morfologi padi lokal Sulawesi Utara (varietas Ombong, Temo, TB, Sultan),yang mengalami genangan selama 20 hari pada fase vegetatif berdasarkan jumlah akar adventif. Pot yang berisi tanaman padi berumur 42 hari dimasukkan ke dalam ember yang telah terisi air dan tanaman terendam setinggi 27 cm di atas permukaan media. Hasil penelitian menunjukkan bahwa faktor varietas, faktor waktu, dan interaksi antara faktor varietas dan faktor waktu menyebabkan perbedaan jumlah akar adventif yang nyata.Kata kunci: Padi lokal Sulawesi Utara, genangan, akar adventif THE NUMBER OF ADVENTITIOUS ROOT IN NORTH SULAWESI LOCAL RICE UNDER PARTIAL SUBMERGENCE ABSTRACTThis study aimed to evaluate the morphological response in North Sulawesi local rice under partialsubmergence for 20 days at the vegetative phase based on thenumber of adventitious roots. Penelitian ini bertujuan untuk mengetahui tingkat populasi jamur tanah di lahan pertanaman kentang (S. tuberosum L.). Sampel tanah diambil di perkebunan tanaman kentang Desa Pinasungkulan Kecamatan Modoinding yang banyak menggunakan pestisida. Penelitian ini dilakukan dengan mengisolasi jamur pada tanah di pertanaman kentang di Desa Pinasungkulan, Kecamatan Modoinding, Kabupaten Minahasa Selatan dengan pengenceran bertingkat dan dilanjutkan dengan menghitung jumlah koloni dengan metode Total Plate Count (TPC). Dari hasil isolasi diperoleh 6 famili dengan 11 jenis jamur tanah yang memiliki koloni terbesar pada isolat KJ1 sebesar 71 koloni dan terendah pada isolat KJ8, KJ10, dan KJ 11 masing-masing sebesar 2 koloni.Kata kunci: Tanaman kentang, jamur tanah, tingkat populasi, Total Plate Count (TPC) ANALYSIS OF SOIL FUNGUS POPULATION LEVELS  IN POTATO PLANTS (Solanum tuberosum L.) This research was carried out by isolating fungi on soil in potato plantations in Pinasungkulan Village, Modoinding District, South Minahasa Regency with multilevel dilution and continued by counting the number of colonies using the Total Plate Count (TPC) method.
