Hospitality artisan entrepreneurs’ perspectives of sustainability 酒店业工匠企业家对可持续发展的看法

Artisan entrepreneurs are argued to be creative disruptors of business norms influencing societal, political and economic change. Yet, studies of small- and medium-sized hospitality artisan enterprises are few, especially studies of their sustainability practice. This interpretive study used qualitative in-depth interviews with eight New Zealand hospitality operators who are deemed artisan entrepreneurs to glean exploratory insights into their perspectives of sustainability in their enterprises. Thematic analysis revealed four overarching conceptual themes that captured the artisans’ journeys against the tide of conventional business mores towards sustainable practice. The themes were the backstory, a road less travelled, tribe of journey-makers and rewards of the journey. The findings highlight that the sustainable hospitality business model demands much more than the conventional equivalent. As such, the findings reveal a sustainability consciousness as the driving motive and important starting point. The study also provides some evidence to confirm hospitality artisan entrepreneurs as creative disruptors in the global sustainable business agenda.

Eiffel Tower and Big Ben, or 'off the beaten track'? Centripetal demand in Airbnb 埃菲尔铁塔和大本钟,还是“僻静的地方”?Airbnb的向心需求

Abstract In the light of the debate on the growth of visitor numbers to city destinations and the sociocultural footprint of urban tourists, the spatial distribution of urban vacation rentals is a key question: does 'sharing', as Airbnb has claimed, spread visitors to peripheral neighbourhoods and contribute to decreasing the congestion in traditional tourist hotspots? Or does it, on the contrary, worsen this congestion problem, with its consequences for the perception of tourism by residents, in traditional tourist centres? This article analyses the spatial concentration of Airbnb listings in 26 European cities in terms of a distance decay from a central point. Besides the concentration of the offer, it studies the decay of business performance according to the distance from the city centre. The study finds an exponential decay for the number of listings. There is a strong effect on financial performance and a more limited effect on rental performance. While several single city studies show that Airbnb, instead of spreading tourism to neighbourhoods, led to greater concentration, these findings show that these were not incidental excesses but a common development pattern for Airbnb. Implications are that the authenticity sought by Airbnb users is not the same as the search for an unspoilt neighbourhood life. Furthermore, it means that benevolent policies towards urban vacation rentals, aimed at spreading tourism, are based on a false assumption.

The antecedents and consequences of luxury hotel consumers’ sense of belonging 豪华酒店消费者归属感的前因与后果

This research aims to conceptualize the antecedents and consequences of luxury hotel consumers’ sense of belonging (SB). This study incorporates an ‘expectation’ variable into a stimulus-organism-response model to investigate the influence of perceived experiential value on consumers’ satisfaction, SB and behavioural intentions. In total, 489 Taiwanese consumers were recruited, and structural equation modelling was used to examine the proposed model. The results demonstrate that perceived experiential value influences consumers’ satisfaction, which in turn influences their SB. Moreover, an SB can affect consumers’ consumption intentions. Furthermore, expectations positively moderate the relationship between perceived experiential value and consumer satisfaction.

Cultural homestay enterprises: Sustainability factors in Kiangan, Ifugao 文化民宿企业:赣赣、伊富高的可持续性因素

Abstract This article contributes to the continuing discussion about the community-based tradition of sustainability in small tourism enterprises. An analysis is made of cultural homestay enterprises at a UNESCO World Heritage town in Kiangan, Ifugao as it examines the standardized nature and the effect of the regionalized homestay identity of the Association of Southeast Asian Nations (ASEAN). The findings revealed that regional organizations in the ASEAN have focused on improving their competitiveness by marketing homestay tourism product globally. Homestay operations in the region which are holistic in strategy are the 'hard' factors that monitor and systematize the process, while closely related factors arising from culture are said to be the 'soft' elements. The subsequent overlap of the two affect the local enterprises as a whole and consequently promote further homestay tourism. An important implication from these findings are the three foundation variables of cultural tradition and heritage, cultural identity and infrastructure ventilation that is specific to the Philippines. The stronger, embedded and authentic these foundation variables are, the more successful and profitable these small tourism firms will be as this equates to tourist arrivals.

A freegan pop-up café: Embedding critical hospitalities into the curriculum 一个免费的快闪咖啡馆:将关键的好客融入课程

This article suggests the importance of opening tourism and hospitality management education to critical perspectives and practices. Critical developments on hospitality have had a limited impact on higher education curricula, which retain a strong vocational orientation. This article presents a student-led pedagogical innovation that enacts hospitality as a critical tool. The activity involved the organisation of a pop-up cafe using freegan principles. Surplus food was transformed into nutritious meals that were distributed on campus on a pay-as-you-feel basis. The innovation drew on Tribe’s (2002) philosophical practitioner, which vindicates the practical value of adding critical reflection into vocational courses. This article reflects on the pedagogical value of embedding critical hospitalities into vocational curricula. The experience raised relevant questions concerning the interplay of hospitality and criticality, the ethical values of tourism education and the educational needs of tourism management students more generally.

Space-to-face (S2F) hospitality in spaces and places 空间对面(S2F)的待客之道

Abstract This study investigates how spaces and places with no human interaction convey a sense of hospitality ‐ a phenomenon we term space-to-face (S2F) hospitality. By problematizing the traditional conceptualizations of hospitality that emphasize the role of human interaction, this study aims to highlight the spatial aspects of hospitality. Physical environment has commonly been investigated only as one dimension of hospitality. However, spaces and places where there is nothing but the physical environment to convey a sense of hospitality are becoming increasingly common. For instance, railway or bus stations with ticket machines have no human interaction but a space and a place to convey a sense of being welcome or unwelcome. Using a participant-generated photography, this study was built on empirical data from 46 participants, who provided 234 photos and associated descriptions of perceived hospitality in spaces and places. As a result, we found six dimensions under macro and micro layers that capture S2F hospitality: domesticity, cleanliness, safety and security, restrictedness, intactness, and functionality. As a contribution, this study broadens the views on hospitality, and explores the concept of S2F hospitality that is relevant to for all types of spaces and places.

A good going: The importance of the funeral meal at traditional western Christian funerals in the United Kingdom 在英国,传统的西方基督教葬礼上,葬礼餐的重要性

Abstract It is a paradox that funerals are one of the most significant end-of-life events, and yet they are rarely discussed in hospitality research. This article explores one aspect of the funeral ‐ namely the importance of food at traditional western Christian funerals ‐ through interviews with five UK-based funeral directors and five funeral catering providers. Exploring both the historic significance and the current importance of the funeral meal, five specific issues were examined: funeral poverty, family interactions, power relationships, financial control/power and socialization. The study not only highlights the continuing social significance of the funeral meal in Christian western society but also the unequal power relationships between the mourners and the funeral director. However, funeral directors and their catering providers are still mindful of the costs and driven by a growing concern over funeral poverty; there is an increasing awareness for both the funeral and the funeral meal to match the mourner's ability to pay. The study concludes that the format of the funeral meal needs to change to better reflect people's changing lifestyles, and outlines areas where further research is required to better understand the significance of the funeral meal.

This article explores one aspect of the funeral ‐ namely the importance of food at traditional western Christian funerals\u0000 ‐ through interviews with five UK-based funeral directors and five funeral catering providers. Exploring both the historic significance and the current importance of the funeral meal, five specific issues were examined: funeral poverty, family interactions, power relationships, financial\u0000 control/power and socialization. The study not only highlights the continuing social significance of the funeral meal in Christian western society but also the unequal power relationships between the mourners and the funeral director. However, funeral directors and their catering providers\u0000 are still mindful of the costs and driven by a growing concern over funeral poverty; there is an increasing awareness for both the funeral and the funeral meal to match the mourner's ability to pay. Dirty deeds, done dirt cheap: Creating 'hospitable wages' through the Living Wage Movement 肮脏的行为,做得很便宜:通过最低生活工资运动创造“好客的工资”

Abstract This conceptual article calls for a greater recognition of wages in academic and media discussions of hospitality and tourism employment. The article draws on the New Zealand hospitality and tourism context, but places the discussion in an international perspective as well. The article approaches the topic of low wages in a new way, arguing that rather than being an inevitable outcome of structural factors, improving wages can be an 'engine' for reducing turnover and becoming employers of choice, and significantly improving employees lives. The article conceptualizes a 'hospitable wage', defined as a wage that incorporates genuine care and consideration of well-being for a level of care that hospitality employers would expect their staff to apply to guests. The concept of a hospitable wage is differentiated from the constructs of minimum wage, fair wage and the living wage. The article concludes by proposing that the Living Wage Movement is a practical and pragmatic way to operationalize a hospitable wage and thereby potentially improve conditions for employers and employees alike.
