The functional products development of mass consumption is an important state task and an element of legislative support for state policy in the field of functional and specialized food production in the Russian Federation. The study aim is to prototype whey drinks with a given antioxidant activity developed using potentiometric sensor systems. The authors used a preference field with specified criteria, such as antioxidant activity, organoleptic parameters and cost, and scored each criterion from 5.0 to 1.0. The manuscript presents the expert evaluation results of aqueous infusions of pharmacopoeial medicinal and tech nical raw materials according to the specified criteria, the samples formulation of whey drinks with high antioxidant activity, its physico-chemical parameters and the organolep tic evaluation results. The applicability coefficient for prototyping whey drinks based on sugar and sucralose was 4.83 at preset 4.5 value. A man formed descriptors panel; de termined its intensity; constructed the flavor profile of the developed whey drinks with high antioxidant activity; studied the antioxidant activity dynamics during storage using the developed sensor potentiometric system Pt/AK relative to O/Ag/AK. Based on the study results in accordance with TR CU 033/2013, the researchers identified regulated indicators and storage modes: temperature (4 ± 2) °C, humidity – no more than 75 %, shelf life – no more than 30 days; after opening the package – temperature of (4 ± 2) °C – no more than 1 day. A man developed gentle technology to preserve valuable biological ly active substances by introducing liquid nitrogen into PET containers. The antioxidant activity of the developed whey drinks was 85.1 % of the antioxidant activity of 90 mg of ascorbic acid ((9.98 ± 0.3) mmol-eq/dm3 ).

The formation of L-ascorbic acid molecular complexes with various biologically active substances opens the way to the production of a new drug type promising for the pharmaceutical, food and cosmetic industries use. The research concerns the possibility study of obtaining a conjugate of L-ascorbic acid with isomaltite in an aqueous ethanol (40 %) medium. The method of the target product isolating involves thermostating a solution containing equimolar amounts (0.001 mmol) of components (50 °C, 1 hour), followed by slow solvent removal for 24 hours (25 °C). The authors examined formation processes dynamics by molecular spectroscopy methods through sequential sampling. The optical density values at 350 Nm in the electronic spectra and 1,674 and 1,754 cm−1 bands position in the IR-Fourier solution spectra indicate the components destruction absence during thermostate control. When treated with carbon tetrachloride or diethyl ether, the syrupy mass obtained after solvent removal containing significant solvent amounts crystallizes a yellowish powder (0.32 g, ice point at 146.6 °C). A man studied its structure by the IR-Fourier spectroscopy. The authors recorded the spectra in the transmission mode (in the KBr tablets) and using the diffusion reflection method enabling to record changes in the absorption bands characteristic positions of the molecular complex formation. The transmission spectra of the high-frequency area indicate the 1-O-glycosylated isomaltite component involvement in the conjugation with ascorbic acid. The shifts of the C=C, C−O and C−O−H bond oscillation bands in the diffusion reflection spectrum of the isolated product relative to their position in the initial component spectra in the low-frequency area indicate the endiol ascorbic acid fragment interaction with the secondary OH groups of the acyclic isomaltite component. Structural analogues of the studied molecular conjugate are promising antioxidant preparations. This determines the further study relevance of its properties.

The thesis concerns the primary gastroenterological incidence analysis in certain districts of the Kursk region and the identification of areas with a steady level decrease in primary morbidity. A man ranked the subjects of the Russian Federation on the incidence of acute intestinal infections of unknown etiology. According to the Aleksandr A. Spasov classification, the authors identified nine groups of biologically active additives supporting the digestive organs function; studied ingredients reducing the risk of gastrointestinal inflammatory and ulcerative processes; scrutinized the general chemical composition of plant ingredients of gastroenterological action. Roots of ginseng and calamus contain a significant amount of digestible carbohydrates (39.8 and 34.1 %, respectively). Spirulina and calamus root have an increased content of minerals, including antioxidants such as zinc, magnesium, selenium, copper (7.1 and 5.9 %, respectively). The paper presents the study results of the vitamin composition and the macro- and microelements content in plant ingredients, as well as ginseng root ginsenosides aged four, five and six years. A man developed three specialized food additive compositions based on the chemical medicinal plant composition analysis and justification of active substances for gastroenterological purposes, that included from 5 to 10 % ginseng root, from 60 to 65 % flax seeds, from 3 to 5 % calamus root, from 22 to 27 % spirulina. Against nutritiology, the food products enrichment with the developed additive will contribute to the gastroenterological disease prevention.

According to the latest WHO guidance documents, activities on sustainable and healthy nutrition include a nutrient profiling stage as a basic condition for implementing evidence-based actions on issues such as the diet correction, the food recipes modification, the digital food environment and public procurement. The study aim is to systematize the available tools of nutrient profiling as effective practices for classifying and ranking food products in accordance with its ability to prevent diseases and promote human health. Nutrient profiling enables to rank products based on its nutrient content. There are many models of nutrient profiling in the world today, however most of them are not validated. One of the urgent tasks is to assess the prospects of using this tool in Russian nutritional practice. The authors analyzed materials and scientific sources that reveal the nutrient profiling essence, its history and timeline in different countries of the world. Nutrient profiling and nutrient profiling models in Russian practice can act as a policy tool in the field of the population nutrition improvement, for public health purposes, ensuring a balanced food consumption model, conscious and adequate food selection.

Nutrigenomics is a relatively new discipline, but it has huge potential for the prevention and treatment of certain types of diseases. The presented review enables scientists and medical professionals to get useful information about the nutrigenomics role in the prevention of diseases related to nutrition and lifestyle. The study aims at analyzing, systematizing and generalizing scientific data on the nutrigenetics and nutrigenomics role in the food systems technology development. The manuscript describes the search results for scientific articles and regulatory documents in the electronic databases such as Google Scholar, PubMed, Science Direct, Scopus, eLibrary.ru, consisting of trends in the nutrigenomics development as an interdisciplinary science. When conducting the research, a man uses methods of analysis, systematization and generalization. The thesis presents definitions of the main terms used in nutrigenomics; demonstrates nutrigenomics development trends in the prevention of various diseases; reflects new directions focusing on the interaction of nutrition and genes for a comprehensive study of the overall nutrients or diet impact on human health. The researchers revealed the nutrigenomics role in the prevention of carbohydrate metabolism disorders, mental disorders, and in the development of personalized nutrition; systematized the data on research methods used in nutrigenomics, conducted a review of various aspects of nutrigenomic research, omix technologies, and nutraceuticals. Nutrigenomic research contributes to the foods development that benefit and improve human health by revealing the molecular mechanisms in the nutrients impact on human metabolism.

Catering in child welfare institutions, considering the individual characteristics of food tolerance, is an urgent problem. The research aims at substantiating and optimizing the preschool children diet with food intolerance scientifically. The authors assessed diets of children with food intolerance – pupils of a specialized preschool institution located in the ecologically unfavorable territory of the Sverdlovsk region. A man developed scientifical ly based diets in accordance with the physiological needs and clinical and immunological children profile. 97.8 % of the children included in the study demonstrated food intoler ance, and each child had the recommendation to exclude from 1 to 29 products. The diets developed by the immunologist in preschool had an unreasonably limited range of food products, did not meet the physiological need for energy, macronutrients, vitamins B1, B2, calcium. A man relates eggs, milk and fish intolerance to a permeability violation of the natural intestinal mucosa barriers. The diet modeling in the preschool institutions relied on the clinical and immunological studies data, adaptive-compensatory and detoxification mechanisms of food substances action. The developed hypoallergenic menu enables to optimize the diet in terms of nutrient and amino acid composition, in particular by imple menting foods with increased nutritional and biological value. A man adjusted the diet to the physiological needs of children, strengthened the protective-compensatory and detoxification orientation to reduce the morbidity risk. The initially formed elimination nutrition model in preschool leads to a protein-energy deficit, dietary fiber, B vitamins and minerals (calcium) deficiency, which affected the physical children development, and the metals elimination, decrease in the protective and adaptive body functions, worsening atopic dermatitis symptoms.

The research aims at substantiating and optimizing the preschool children diet with food intolerance scientifically. The authors assessed diets of children with food intolerance – pupils of a specialized preschool institution located in the ecologically unfavorable territory of the Sverdlovsk region. A man developed scientifical ly based diets in accordance with the physiological needs and clinical and immunological children profile. 97.8 % of the children included in the study demonstrated food intoler ance, and each child had the recommendation to exclude from 1 to 29 products. The diets developed by the immunologist in preschool had an unreasonably limited range of food products, did not meet the physiological need for energy, macronutrients, vitamins B1, B2, calcium. A man relates eggs, milk and fish intolerance to a permeability violation of the natural intestinal mucosa barriers. The diet modeling in the preschool institutions relied on the clinical and immunological studies data, adaptive-compensatory and detoxification mechanisms of food substances action. The developed hypoallergenic menu enables to optimize the diet in terms of nutrient and amino acid composition, in particular by imple menting foods with increased nutritional and biological value. A man adjusted the diet to the physiological needs of children, strengthened the protective-compensatory and detoxification orientation to reduce the morbidity risk. The strategic task of the modern food industry is the development of functional food prod ucts targeted at the chronic diseases reduction, the life expectancy growth in citizens of the Russian Federation, as well as the replacement of imported food substances widely repre sented on the Russian market. The research aim is developing a synbiotic that consists of polyphenolic compounds of Arctic phyto raw materials obtained by cultivating callus cells in sterile laboratory conditions, as well as industrially produced probiotic microorganisms. The authors revealed that the glycoside content in the callus tissue was lower than in the plant, the benzoic acid content was also reduced. However, there is an increase in the fla vonoids amount from 12.6 % to 16.5 % in the callus mass. According to the research results, a man detected the largest biomass growth volumes after 35 days. The complex compound contained a significant amount of fiber up to 18.2 mg/100 g, polyphenolic compounds – up to 515.5 mg/100 g. The resulting product was a light brown powder with a moisture con tent of 5.8–7.0 %, sent for the subsequent microencapsulation process as a core.

A number of micronutrients in the diet are substances capable of inhibiting the genes expression of cyclooxygenases COX-1 and COX-2 and inducible NO synthase that are markers of the inflammatory process in COVID-19. The study aims at the development of the composition micronutrients – an inhibitor of hyperinflammatory reaction as an effective component of personalized nutrition in COVID and post-COVID syndromes. The thesis presents the anti-inflammatory potential of some micronutrients; proves the impact of flavonoids, ascorbic acid, glycyrrhizic acid and zinc on different targets; describes developed two-, three- and four-component compositions of the listed micronutrients in different ratios, which will ensure effectiveness against a larger number of targets. For preclinical studies of anti-inflammatory activity, a man selected six composition samples with maximum values of antioxidant activity using regression analysis; determined the biological activity of the composition samples: in vitro – using specific enzyme biotest systems based on inducible NO synthase and appropriate software, in vivo – on a model of acute aseptic and chronic inflammation in 220 outbred male Wistar rats. In vitro experiment confirms that the anti-inflammatory activity of experimental samples of the micronutrients composition decreases in the following series: III-2 > III-1 > VI-2 > VI-1 > I. The blood plasma analysis of rats in vivo proves that with prolonged course use, micronutrients composition samples III-1, III-2, VI-1 and VI-2 exhibit a pronounced antiexudative effect and lead to a significant decrease in COX-2. The course micronutrients composition introduction at a dose of 25 mg/kg leads to a significant decrease in the COX-2 concentration in all the studied animal groups. There is the COX-2 activity suppression in sample III-2 to a greater extent. The authors recommend the three-component composition including a micronized purified flavonoid fraction of sea buckthorn meal, glycyrrhizic and ascorbic acids in a ratio of 30:10:100 as a biologically active food additive in the diet of personalized nutrition for COVID and post-COVID syndromes.

The Mediterranean diet is one of the scientifically based types of nutrition aimed at maintaining health and active longevity. The diet implies high consumption of unsaturated fats, cereals, fresh fruits and vegetables, low-fat dairy products, and involves moderate physical activity. The research aims at studying the influence of the Mediterranean diet combining with physical activity on the nutritional status indicators of the adult population. The experiment involved 13 people aged 34 to 55 years (12 women and 1 man) with nutritional disorders. Developed recommendations were based on the catering using the Mediterranean diet principles. A man divided the group into two parts: during the study 7 people did physical activity (strength and aerobic exercises of medium and low intensity) besides following the nutrition recommendations; 6 people followed only the nutritional advice. The researchers specified the Mediterranean diet and physical activity impact on the nutritional status of the experimental subjects using two biomarkers groups: anthropometric indicators (waist circumference, body weight, body mass index) and biochemical blood parameters (fasting glucose, total cholesterol, low-density lipoproteins, high-density lipoproteins). Based on a comprehensive assessment of nutritional status, a man revealed the positive Mediterranean diet impact on health indicators. Every subject in the experiment demonstrated an improvement in one or more nutritional status indicators. At the same time, combining diet and physical activity determined more significant positive changes: in the experiment three subjects from this category had their nutritional status indicators normalized completely.

The thesis considers the food crisis in Russia considering historical, socio-economic and political circumstances. The study aims at determining food crises causes and identifying its compensation ways. Therefore, a man solved the following tasks consistently: studying the food crises content throughout all stages of the Russian agrarian development; determining the main food crisis causes at each stage; identifying the main ways to solve the food crisis. The study objects are articles, reports, notes with messages about the food crisis and the fight against hunger, statistical and economic information about agriculture in Russia. The researchers considered historical experience of food difficulties caused by natural or social factors, including statistical data on corn failures for 1891, 1906 and 1911 in the European part of Russia; the reduction dynamics of the grain cropped land and the productive cattle number in the RSFSR in 1913–1928; the share of the USSR agricultural territory occupied in 1941–1944; the dynamics of the USSR agricultural machinery fleet in 1940–1945; the dynamics of agricultural machinery and mineral fertilizers supplies for the USSR agriculture in 1940–1945. The paper concerns ways of solving food crisis, including technologies application that increase food production, such as biotechnology, genetic engineering, as well as the equal food distribution and public pressure to promote sovereign food programs, food production increase technologies.
