Antioxidant, Antibiofilm & Biological Activities of Summer Savory 夏季咸味的抗氧化、抗菌及生物活性研究

The Hepatic disease all over the world had a more attention towards the prevention methods; planned diet can effective and protective. Therefore, this study was aimed to examine the antioxidant and hepatoprotective role of the dried savory leaves (1 and 2%) and its dried hydroethanolic extract (25 and 50 ppm) against carbon tetrachloride (CCl 4 ) induced liver damage in rats. Also, the effect of savory leaves extract on biofilm formation of some microbial strains was studied. Liver injury group revealed significant increase in serum liver parameters such as AST, ALT and ALP activities and malondialdehyde (MDA) levels. Whereas, reduction in superoxide dismutase (SOD) activity was done. Furthermore, the liver injury rats recorded hepatic histological several and severe alteration due to hepatocellular damage by CCl 4 . Treatments by the dried savory leaves and its extract at different levels resulted significantly improved the liver function and oxidative stress parameters; also, suppresses the histological alteration in liver. Both Gram-positive and Gram-negative bacteria have the ability to form biofilm with varying degrees. The savory ethanolic extract has an antibiofilm effect against the studied bacteria strains. Effect of Long-Term Storage in Light and Dark at Room Temperature on Physicochemical Characteristics of Some Vegetable Oils 常温明暗长期贮藏对某些植物油理化特性的影响

This work aims to study the effect of light and darkness during storage (12 months) on some edible oils (palm, sunflower, and soybean) on their physicochemical characteristics, oxidative stability and shelf life. The samples were stored in transparent PET bottles in the presence of light (Under illumination light 800 Lux) and darkness at room temperature. The effect of oxidation on oils during storage under light or darkness was evaluated the free fatty acid, peroxide value, thiobarbituric acid test, induction period, and the fatty acids composition, tocopherols, and tocotrienols. The induction period of the oil samples was 27.4, 9.50, and 5.10 h for palm, sunflower, and soybean oils, respectively. The percentages of free fatty acids increase with increased storage time; the highest values in light storage were (0.25, 0.70, and 0.85%) while in dark storage, they were the lowest (0.18, 0.37, and 0.41%) for palm, sunflower, and soybean oils, respectively. As a result, light leads to an accelerated breakdown of unsaturated fatty acids, causing palm, sunflower, and soybean oils to form hydroperoxides of 7.7, 11, and 11.9 meq O 2 /kg oil, respectively.
