Milk is a complex system where lipids, proteins, sugars and salts are present in different phases, and thus shows a characteristic behaviour during either technological treatments or storage. Lipids are organized as globules, small drops of triglycerides surrounded by a biological membrane that ensures stability of their emulsion. Casein is the main milk protein and is organized as micelles containing salts and strongly hydrated. This last feature has an important effect on the micelle stability. Furthermore, micelle stability is ensured by glycosylated k-casein fragments. Interaction between fat globules and casein micelles are likely to occur since ~1010 globules e 1014 micelles are present in 1 mL of milk and their reactive surface is approximately 0.07 and 4 m2 respectively. Different milk processes, i.e. mechanic or thermal, are responsible for interactions which may vary in number and chemical nature. Microscopy techniques represent an indispensable tool to study milk microstructure during milk processing or even on finished products upon storage. Confocal laser scanning microscopy, through specific probes, is suitable to study phenomena of coalescence among fat globules and fat-protein interactions in fluid milk, gel (clotted milk) or cheese. Transmission electron microscopy and immunogold labelling are used to more deeply investigate either milk components ultrastructure or specific interactions established between the milk fat globule membrane and the casein fractions. Food products are matrices where a multidisciplinary approach is necessary for their study, and microscopy certainly plays a key role.

According to Gabba, the ancient literary texts were essential evidence for the modern historian of antiquity, because they provided a view on how the ancients themselves interpreted their historical reality. But, following the steps of Benedetto Croce and Arnaldo Momigliano, he judged equally essential the history of modern historiography and, more generally, of modern reflections on ancient societies. For this reason the Eighteenth-century appeared to Gabba as particularly relevant, because in this century the reflections on antiquity were strictly and vitally connected to political, social and economic problems of the present, particularly during the American Revolution. Gabba wrote therefore a series of essays on the discussions developed in this century about colonies, federalism and commerce between ancient and moderns and on outstanding intellectuals such as Adam Ferguson and John Adams. For this emphasis on political and economic problems Gabba distinguished himself from the perspective of Momigliano, more interested in questions of historical methods and antiquarianism, and connected much closer to the enquiries of Franco Venturi on European enlightenment.

The paper discusses the origins and the main features of Emilio Gabba’s familial library. It highlights the connection between his interests as a historian and the various books in the catalogue. The library itself was created in the 18th century by the Visconti, a family of notaries from Pavia, deeply connected with the cultural environment of the city and with its university. Among the most important books in this library, many works are written by historians and political thinkers, in addition to several legal texts. A few books underline the family’s interesting in Jansenism, which had spread to the university of Pavia, at the same time as the reforms wished by Empress Maria Teresa of Austria.
