An analysis of the dynamics of the market for fruits imported to Russia has been carried out. The market volume, exporters, and sales volume of tropical fruits in Russia have been studied. The factors shaping the quality of tropical fruits are considered. When ensuring logistics, customs clearance, and storage in distribution centers, it is necessary to take into account the actual degree of maturity of climacteric fruits and manage technological regimes at all stages of product distribution, with regard to the physiological state of the product. The work studies the influence of temperature conditions of storage and ripening of avocado fruits on the duration of storage of fruits and the intensity of the processes responsible for their ripening. The values of respiration intensity and ethylene concentration during storage of avocado fruits, which make it possible to determine the degree of ripeness of the fruit and control the duration of their storage, have been established.

The use of bread units in the development of diets for people with diabetes for almost a hundred years proved to be ineffective. The formation of a special diet for diabetics using a methodology based on the calculation of the "glycemic index" has shown that it is possible to characterize products in this way, and GI can be an identification indicator. The developed series of confectionery products has demonstrated that it is possible to control the quality of products by means of GI. GI values should be included on the label when labeling products as an identification indicator of the composition for nutrition quality management.

The scientifi c article presents the results of the analysis of retail trade in Russia and indicates some of the problems of the industry and their solutions. The article shows the current and promising strategies for optimizing fi nancial costs in the retail trade, which helps to increase the economic effi ciency of entrepreneurial activity. The main trends in the development of retail trade in the Russian economy are determined. The theoretical foundations of the concept of "fi nancial costs" are considered. The author's algorithm for the strategy of optimizing fi nancial costs in the retail business is proposed. Recommendatory measures have been developed to optimize fi nancial costs while ensuring an increase in the economic efficiency of entrepreneurial activities of small and medium-sized retail enterprises. The relevance of the scientifi c research on this issue is due to the fact that the economic efficiency and competitiveness of small and medium-sized businesses in the retail trade of the Russian economy depend on the eff ectiveness of fi nancial cost management. Thanks to the implementation of a high-quality strategy for optimizing fi nancial costs, an increase in cost-eff ectiveness and profi tability of entrepreneurial activities in the trading business is ensured. The article analyzes the world market for the production and consumption of wheat grain in 2020– 2021. The creation of a new commodity nomenclature of grain, focused on the export strategy for the production and storage of wheat, is substantiated. It is proposed to determine this nomenclature taking into account 16 Critical Quality Indicators, reflecting the factors affecting the storage stability and functional predisposition of grain. In order to develop a clustering methodology, 12 samples of wheat grain, representing the entire range of grain quality characteristics, were selected and evaluated in two main target categories: “storage ability” and “manufacturability”. The derivatography method was used to study the moisture content of the grain, which is the most important physical and chemical property for the indicated target varieties and their application. It is shown that the following three types of moisture are present in the grain: 1 — poorly adsorbed, free moisture, 2 — strongly adsorbed moisture, bound moisture, 3 — intramolecular moisture. Notably, intramolecular moisture is contained in a fairly significant amount. It is proposed to form the suitability of grain for long-term storage by reducing the proportion of intramolecular moisture to values below the critical ones using a special technological operation of conditioning.

The quality of coff ee was assessed according to the defi ning organoleptic indicators. The consumer properties of coff ee were studied, and the calculation of its energy value was given. A detailed study of the work of the city's coff ee houses included reviewing technical and technological maps and interviewing baristas. Practical recommendations for optimizing the work of coff ee houses were developed.

The Irkutsk market of bottled drinking water was studied. The quality of four water samples of local producers, which occupy 35% of the market, was assessed. Organoleptic (smell, taste and after-taste, color, turbidity) and physicochemical (total mineralization, hardness, pH, content of sodium, potassium, selenium, chlorides, sulfates, hydrogen carbonates, anionic surfactants) quality indicators of the studied water samples, as well as safety indicators (content of heavy metals, radioactive, organic, and chemical substances) comply with regulatory requirements. In terms of organoleptic indicators, the water of the brand "Wave of Baikal" proved to be the best.
