Characteristics of the modern nut market 现代坚果市场的特点

Despite seasonal fl uctuations depending on annual climatic conditions, the nut market is showing steady growth. The increase in nut production is explained by the rise in their consumption as a raw material for confectionery products, as well as for direct consumption as an alternative source of basic and physiologically active substances. In total, 5,367,530 tons of nuts were produced in the 2022–2023 marketing year (excluding peanuts). Almonds lead the world production. It is followed by walnuts, cashews, pistachios, and hazelnuts. Pine nuts are the only nut produced in the Russian Federation on an industrial scale. According to Russian data, in the 2022/23 season, the country produced about 35 thousand tons of pine nuts in shell, which is half of the world production of this type. Global production of inshell peanuts annually is about 50 million tons.

This article presents an analysis of the market for fortifi ed food products manufactured worldwide for the period of 2014–2022. The prospects for using a mix of microgreens as a functional ingredient in the fortification of food products for mass consumption and the results of the formation of the biological effectiveness of the fat component of fortifi ed mayonnaise sauce for the development of export-oriented production, which is not inferior in consumer properties to foreign analogues, are presented.

Management of current scientifi c research and development is based on the life cycle of a product (goods), which begins with a marketing justifi cation for a development project and an analysis of the relevance of the problems. Therefore, the results of the author’s study of the potential demand for such items as raw materials, ingredients, food products, etc., which need to be developed in the context of industrial import substitution in our country, may be useful.

According to Roskachestvo, today there is a fairly high share of low-quality, unsafe, and falsifi ed dairy products on the Russian market. When studying the quality of two samples of pasteurized drinking milk with the same fat content of 3.2% in terms of organoleptic, physical and chemical indicators (as part of the fi nal qualifi cation work), it has been revealed that one sample of drinking milk does not comply with the information on the label and the requirements of the standard for physical and chemical indicators; it can be assumed that this sample is diluted with water. It should be noted that no vegetable fats were detected during the study of both samples.

Currently, there is a constant increase in the number of people who adhere to a healthy lifestyle and are actively involved in sports. In Russia, the average share of people who are keen on sports is about 27.5%. The increase in the number of sports clubs in the country leads to an increase in demand for sports nutrition, as more and more people seek to improve their nutritional composition and nutrition quality. Analysts predict the growth of the global sports nutrition market in the next decade. It is important to note that this trend not only demonstrates the growing popularity of a healthy lifestyle, but also provides new opportunities for the development of the sports nutrition industry and the creation of innovative products that meet the needs of athletes and healthy people. In order to determine the potential profi le of sports nutrition consumers, we conducted a survey among respondents of various age groups in Yekaterinburg. Based on sports nutrition market statistics, an assessment of the assortment off er of the most popular stores in Yekaterinburg was made according to various criteria. The data obtained will allow understanding the general awareness of consumers and determining the quality and range of the assortment of the sports nutrition market.

Analytical review of methods for determining mechanical damage to buckwheat grain 荞麦籽粒机械损伤测定方法分析综述

The article provides an overview of methods used to determine mechanical damage to buckwheat grain and its internal defects. It is shown that the assessment of the qualitative state of buckwheat when stored in elevator silos must be carried out taking into account the presence of damaged grain, which requires the development of objective instrumental methods for determining macro- and microdamage to this crop. Currently, visual methods with pre-processing (under a magnifying glass and microscope) and without pre-processing are used, which are inaccurate. The most advanced method for determining damage to grain and its internal defects is the radiographic method, which requires improvement and automation for cereal crops, in particular for buckwheat.
