Establishment of Rice Bakanae Disease Management Using Slightly Acidic Hypochlorous Acid Water 微酸性次氯酸水防治水稻叶根病的建立

Rice bakanae is a typical seed-borne and seed-transmitted disease caused by infection by Fusarium fujikuroi. Seed disinfection using chemical fungicides (such as benomyl and prochloraz) is most effective in controlling the disease, but the emergence of fungicide-resistant strains has recently been increasing. Slightly acidic hypochlorous acid water (SAHW) is a safe and environmentally friendly disinfectant that has a potent and broad spectrum of antimicrobial activity against viruses, bacteria, and fungi. In this study, we aimed to investigate the effectiveness of SAHW against F. fujikuroi strains, including chemical fungicide-resistant strains, as an alternative to conventional chemical fungicides in the management of bakanae disease. SAHW showed strong but similar levels of antifungal activity among the F. fujikuroi strains with a minimum inhibitory concentration (MIC90) of 5±2.5 ppm of free available chlorine (FAC). In addition, F. fujikuroi cells lost viability completely within 5 min of SAHW treatment due to the lethal damage to cell integrity. When the rice seeds infected by F. fujikuroi were treated with SAHW containing 20±10 ppm of FAC for 12 hr, the efficiencies of seed disinfection and disease control were 95-98% and 90.1-92.6%, respectively. Altogether, our data suggest that SAHW is an effective compound for controlling rice bakanae disease.

Effect of Tenebrio molitor Larvae Fermented with Saccharomyces cerevisiae M1 (KACC 93023) on Non-alcoholic Fatty Liver-induced Rats 酿酒酵母菌M1 (KACC 93023)发酵黄粉虫幼虫对非酒精性脂肪肝大鼠的影响

In this study, Tenebrio molitor (brown mealworm) larvae powder was fermented with Saccharomyces cerevisiae M1 (KACC 93023). The fermented and non-fermented powders were subsequently administered to rats with induced non-alcoholic fatty liver disease to compare the degree of improvement. The rats exhibited abnormal lipid metabolism due to orotic acid, and the group that were fed the fermented larvae powder showed similar weight to normal rats. AST, ALT, ALP, and LDH activities, all known indicators of liver health, and various other lipid-related indicators appeared positive, suggesting improvement. The lipid peroxide and glutathione content in the liver tissue and serum were similar to or better than those of the normal group. Finally, morphological observations of liver tissue using H&E and oil red O stainings revealed that the fermented powder group showed markedly reduced fat along with normal hepatocyte shape and arrangement. To summarize, it was confirmed that dietary brown mealworm larvae improve non-alcoholic fatty liver function, and, when fermented with yeast, most indicators showed positive improvements to almost normal levels. As such, the fermented powder can be considered to improve non-alcoholic fatty liver, suggesting that it may be used as a material for various products in the future.

Effect of Olive Oil Substitution Ratio on Quality Characteristics of Low-fat Pork Patty 橄榄油替代率对低脂肉饼品质特性的影响

This study investigated the effect of olive oil substitution ratio on physicochemical quality of pork patty. Five treatments were performed as follows: control (T0, 20% pork fat), T1 (pork fat 15% and olive oil gel 5%), T2 (pork fat 10% and olive oil gel 10%), T3 (pork fat 5% and olive oil gel 15%), and T4 (olive oil gel 20%). The moisture increased and fat amount was decreased in proportion to olive oil substitution ratio. The L and a values were highest levels in raw and cooked pork patty of T0, and the b value was highly enhanced in of cooked pork patty of T4. The water holding capacity, moisture and fat retention were significantly increased, and the cooking loss, diameter reduction and shrinkage ratio were decreased by olive oil substitution ratio. The hardness, springiness and chewiness showed the highest level in T4, and the cohesiveness and gumminess were highest in T0. The reduction ratio of cholesterol in T1, T2, T3 and T4 were 13.8%, 21.6%, 34.5% and 49.0%, respectively, indicating that the content was lowest level in T4. The palmitic acid was the most abundant saturated fatty acid, and the oleic acid was the most abundant unsaturated fatty acid. The unsaturated fatty acid of pork patty was increased in proportion to olive oil substitution ratio. Therefore, the olive oil gel substitution of low-fat pork patty results in a positive effect on the physicochemical qualities due to reduced cholesterol and saturated fatty acids.

Five treatments were performed as follows: control (T0, 20% pork fat), T1 (pork fat 15% and olive oil gel 5%), T2 (pork fat 10% and olive oil gel 10%), T3 (pork fat 5% and olive oil gel 15%), and T4 (olive oil gel 20%). The moisture increased and fat amount was decreased in proportion to olive oil substitution ratio. The L and a values were highest levels in raw and cooked pork patty of T0, and the b value was highly enhanced in of cooked pork patty of T4. The water holding capacity, moisture and fat retention were significantly increased, and the cooking loss, diameter reduction and shrinkage ratio were decreased by olive oil substitution ratio. The hardness, springiness and chewiness showed the highest level in T4, and the cohesiveness and gumminess were highest in T0. The reduction ratio of cholesterol in T1, T2, T3 and T4 were 13.8%, 21.6%, 34.5% and 49.0%, respectively, indicating that the content was lowest level in T4. The palmitic acid was the most abundant saturated fatty acid, and the oleic acid was the most abundant unsaturated fatty acid. The unsaturated fatty acid of pork patty was increased in proportion to olive oil substitution ratio.
