This study aimed to optimize total nitrogen (TN) content in the medium and the growth temperature to improve the shelf life of Pleurotus eryngii Keneutari No. 2. We investigated the growth characteristics and changes in the O2/CO2 content in polypropylene film and performed sensory evaluations during cold storage under 1.5%, 1.8%, 2.1%, and 2.4% TN and at temperatures of 9°C, 12°C, and 15°C. The diameter and weight of the fruit bodies tended to increase with increasing nitrogen content, regardless of the growth temperature, and the highest weight per bottle (149.5 g) was obtained at 12oC and 2.4% TN. Regardless of the nitrogen content, leaf color deepened with decreasing temperature. The gas concentration in the film, which changes depending on storage time, was maintained for the longest period at 9oC and 2.1% TN. The sensory evaluation revealed no difference between the different nitrogen conditions tested, and the odor, discoloration, and decay were similar at 15oC and 9oC until day 28 of storage.

Eight morel mushroom species were collected from Korea and other countries. The culture characteristics, genetic relationships, and beta-glucan content of the strains were analyzed. The mycelia of Morchella species exhibited optimal growth when cultured in dark at 25 °C in media with pH 7. The mycelia had a distinctive mycelial scent and characteristically changed color, being white initially, and then turning dark yellow to dark brown as it grew. The mycelia were classified into five types based on morphology. The isolates were identified as Morchella conica, two M. sextelata, M. importuna, M. esculenta, and three M. crassipes, based on ITS-rDNA sequences. PCR polymorphisms were variably produced within Morchella spp. using Universal Fungal Fingerprinting Primers (UFPF) and classified into four groups at the intra and inter species level. The strains, KMCC04971 and KMCC04407, showed the same banding pattern as M. conica and M. sextelata, respectively; however, these results were different from those of ITS analysis. Glucan content analysis by strain showed that the KMCC 04973 strain of M. importuna had the highest alphaand beta-glucan content, at 16.4 g and 33.1 g per 100 g, respectively.

This study sought to determine the optimal mixing ratio of Korean cultivated Artemisia annua for production of functional oyster mushrooms. After 23 days of cultivation, mycelial growth was 12.7 cm in medium supplemented with 5% A. annua and 12.5 cm in control. Mycelial growth progressively slowed with the addition of A. annua, with barely any growth (2.1 cm) in the presence of 70% A. annua. Mycelial density was high density without significant difference between treatments. The pileus diameter was greater in the presence of A. annua than in the control, but the pileus thickness was only slightly higher compared to the control. The stipes thickness was greatest for 15% A. annua, and the length of stipes was longest at 10% A. annua, but was lower than the value of the control. The L value of the fruiting zone was highest 10% firewood, and the L value of freshwater was highest at 5% A. annua. The fruiting body yield was highest to (122 g/850 ml) in medium supplemented with 5% A. annua but markedly decreased at higher levels of A. annua.
