Real Argentinian Food. Tensions and Conflicts in Value-Added Processes of Products to Commercialization and Tourism

Wine and dulce de leche (Caramel sauce) were recognised as cultural national food heritage in Argentina due to their importance in daily consumption and gastronomic identity. The formal recognition aligns with global food valorisation processes, such as the United Nations Educational, Scientific and Cultural Organization’s (UNESCO) immaterial heritage and the importance of gastronomic tourism. Also, public policies in different countries seek to add value to food and beverages in order to foster the development of rural areas, favour tourism commercialisation, strengthen local identities and enhance traditional/ancestral knowledge. These show the symbolic and economic value of food. In this context, several types of formal certifications and commodification processes, which recognise territorial anchorage, of how certain food is produced and consumed may lead to its standardisation, homogenisation or monopolisation, generating various tensions. Hence, we question the relationship between those who promote value-adding initiatives, how farm producer communities participate in them, which sectors or actors really benefit from these processes and what tensions may arise from them. We will address these questions by reconstructing and analysing the heritage and tourism valorisation of high-altitude wine in the Calchaquíes Valleys area and dulce de leche production in the province of Buenos Aires. © The Authors 2024

Baduy Cultural Tourism is the activity of visiting the Baduy Tribes in Indonesia, which potentially threatens the resilience of the Baduy’s culture. Responding to this, the Baduy Customary Institution changed the nomenclature of Baduy Cultural Tourism to Saba Budaya Baduy . This case study explores the value and specialty of Saba Budaya Baduy as the identity of Baduy Tribes, to analyze the potential of threats and the cultural resilience from the usage of Baduy Cultural Tourism and Saba Budaya Baduy nomenclatures. It explores the values of Saba Budaya Baduy as the effort of cultural resilience to realize cultural sustainable tourism. This qualitative research is based on tourism anthropology and social psychology perspectives in line with the interpretative phenomenological analysis (IPA) technique. The initial findings indicate that Saba Budaya Baduy is guided by the principle of fostering a strong relationship between hosts and guests, rooted in the cultural values of the Baduy Tribe. This approach aims to enhance the representation of the Baduy Tribe and improve the overall experience for visitors engaging in activities with the tribe. The results also highlight how psychological resilience, in responding to external threats, is reflected in the Baduy indigenous people, who are obedient in maintaining and implementing their ancestral traditions. Finally, Saba Budaya Baduy is oriented toward the social, cultural, tourism economy, and environmental resilience dimension of visiting activities within the Baduy Tribe. Therefore, Saba Budaya Baduy can realize and improve cultural sustainable tourism which is oriented toward cultural resilience and sustainable tourism activities. © The Authors 2024

The Growth of Tourism and ‘Development’ in an Indigenous Setting: Exploring a Case of the Chittagong Hill Tracts, Bangladesh

This case study examines the process of tourism development in the Chittagong Hill Tracts of Bangladesh, where multidimensional concerns related to Indigenous communities are coming to the fore. This area contains valuable natural resources that provide huge potential for the growth of tourism. However, accounts of discrimination and violations by the state towards Indigenous peoples indicate the potential for inequality and exploitation while developing tourism. Eleven Indigenous groups live in the Chittagong Hill Tracts, a historically conflict-ridden area where there is tension between the dominant ethnic Bangalee and the Indigenous groups due to the latter's limited control over their way of life and the environment. Structurally, the state endorses mass tourism, where powerful actors – government, military, politically influential individuals, and companies – are engaged in determining the ‘development’ for the Indigenous people and modernising the place as a part of capitalist ventures to gain profits. Given that state actors or private investors wield power and control over tourism, exploitation ranges from Indigenous peoples' lack of control over the planning to limited participation in tourism. Therefore, this case study explores the implications of tourism development for Indigenous peoples, analysing the state’s economic intervention in favour of the Bangalee people, who are an ethnically dominant group in Bangladesh. Moreover, this case study raises questions about how the ‘development’ is taking place and identifies the practice of ‘development’ in an Indigenous setting and how the Indigenous peoples are situated in this capitalistic venture in a post-conflict setting. The case study is based on empirical findings collected through an ethnographic study as part of a PhD. The study followed ethical guidelines approved by the Macquarie University Ethics Committee in 2017. © The Author 2024

This case study reports on Kerala’s backwater tourism and the associated experiences of houseboat employees in the sector. Kerala’s backwater tourism is a significant facet of the state’s tourism industry, drawing both foreign and domestic tourists. Houseboats, referred to as ‘kettuvallam,’ play a central role in backwater tourism, harmonizing tradition with modernity. Despite gaining global recognition, challenges such as escalating costs and external crises, including the COVID-19 pandemic, have impacted Kerala’s backwater tourism sector, leading to severe hardship and job insecurity among employees. Despite these adversities, interviews conducted as part of the case study reveal remarkable levels of ongoing resilience and loyalty on the part of houseboat employees, most of whom are local residents. Their resilience and loyalty are rooted in affective commitment and intrinsic motivation, wherein houseboat employees see themselves as custodians of tradition and ambassadors of the backwater region. In turn, their unwavering dedication may be seen as being a vital factor that can contribute to the ongoing adaptability and resilience of the backwater tourism sector as a whole. © The Authors 2024

Family farming plays a key role in global food production and economic development. Rural areas in Porto Seguro, Bahia, Brazil, possess a rich cultural heritage, sustainable agricultural practices, and traditional communities that have been overlooked by mainstream tourism. To unlock economic opportunities for small farmers and attract diverse tourists, the local government and university (Universidade Federal Fluminense) collaborated to enhance a rural tourism route. Resilience and Loyalty in the Face of Adversity: A Case of Local Employees in Kerala’s Backwater Tourism
Pub Date : 2024-02-06 DOI: 10.1079/tourism.2024.0021
E. J. Ajoon, Stu Hayes

Tourism Clusters, Nature Research and Visitor Experiences: The Case of Fundación Batis in Barranquilla, Colombian Caribbean
Pub Date : 2023-11-27 DOI: 10.1079/tourism.2023.0044

Clusters are beneficial to tourist companies in a number of ways as they have been found to promote innovation of both product and market. The case of Fundación Batis, located in the Colombian Caribbean, will be examined as a best practice in terms of adding tourism to a company’s supply to achieve diversification and supplemental revenue. After a successful incubation in a cluster, this foundation opened its doors to tourists, and its employees now engage in an open dialogue with visitors about conservation issues. As a result, the region gains an upscale offer in natural tourism, which helps to upgrade and diversify the local tourism product. © The Authors 2023
