Research on the status of contamination of some foods through hazard monitoring in Nam Dinh province from 2017 to 2021 2017 - 2021年南定省部分食品污染状况危害监测研究

The recall descriptive study was implemented in the period 2017-2021 of 5,696 food samples (about 1,139 samples/year) in the Nam Dinh Provincial Department of Food Safety and Hygiene. The ratios of microbiology and physicochemical parameters which do not meet the regulation were 4.46% and 3.54%, respectively. Meat and its products were microbiology contaminated at the highest ratio of 8.4%, followed by vegetables and their products were 4.09%, cereals and their products were 3.5%, and non-alcoholic beverages were 2.27%. The main causes of microbiology contamination were Coliform at 4.97%, E. coli at 3.69%, and Pseudomonas at 4.62%. The physicochemical contaminations in meat products were mainly borax at 8.64 %, and the rancidity in frying oil was 19.5 %. Ensuring food safety in recent years has seen positive changes; the ratio of contamination in food surveillance in hazard monitoring in the period 2017-2021 sharply decreased compared to the previous period.

Food chemical contamination condition in Lac Thuy district, Hoa Binh province surveillance in 2021 和平省Lac Thuy区2021年食品化学污染监测情况

Pesticides, formol, borax, and unpermitted colorants using in food production chain still need to control in Vietnam. Our study aimed to determine the chemical contamination in some common food samples collected at production facilities, business stores, wholesale food supply markets in Lac Thuy district. As the results, borax detected at the ratio of 15.9%, in which "Cha" accounted for the highest rate of 25%, " gio lon" was 21.4%; the lowest rate was vermicelli 7.7% and noodle soup 8.3%. The ratio of alkaline dye contaminated was quite high at 58.5%; in which sausages and melon seeds accounted for the highest proportion of over 80%, and the lowest was “Su Se” cake and “Com” cake with 33.3%. Formol was detected at 24.3%, in which rice noodle and vermicelli detected over 30%. The ratio of pesticide residues in fruits and vegetables was 35.6%, in which beans and pulses was contaminated highest ratio with 60%, following is vegetables with 55%, and tomatoes and lettuce with lowest ratio of over 10%.

Colistin-resistant and Extended-Spectrum 𝛽-Lactamase producing Escherichia coli from healthy people and clinical specimens in Ho Chi Minh city 胡志明市健康人群和临床标本中产生大肠杆菌耐粘菌素和延伸谱𝛽-Lactamase

Multidrug resistant bacteria have become a significant cause of morbidity and mortality worldwide. Resistance to last resort antibiotics such as: colistin, newer generation cephalosporins is one of the most important current public health problems. Escherichia coli is the member of the normal microbiota of the human intestine and the intestinal and extra-intestinal pathogenic strains. Treating E. coli infection become difficult because of their resistance to different antibiotics, even to last resort antibiotics. The present study aimed to investigate the phenotypic and genotypic resistance against colistin in 181 extended-Spectrum β-Lactamase (ESBL) producing E. coli isolated from healhthy people and clinical specimens, (28 from healthy people, 153 from clinical specimens). The results showed: Out of 181 E. coli isolates, 13 (7.2%) were identified as colistin resistant phenotype in which 3.6% isolates from healthy people and 0.65% from clinical specimens was positive for the mcr-1 gene. Non of the ESBL producing E.coli isolates had the mcr-3 or mcr-5 genes.

Survey on infection and antibiotic resistance rates of Escherichia coli in pork and chicken meat at some markets in Buon Ma Thuot city in 2021 2021年扶马托市部分市场猪肉和鸡肉中大肠杆菌感染及耐药性调查

To find out the infection rate, and the rate of resistance to common antibiotics of E. coli strains in some types of raw meat, contributing to the prevention of food poisoning and foodborne diseases, we conducted the study: “Survey on infection status and antibiotic resistance rate of E. coli in pork and chicken meat at some traditional markets in Buon Ma Thuot city in 2021”. The study aimed to determine the infection rate of E. coli strains in pork and chicken meat at markets in Buon Ma Thuot city in 2021, and determine antibiotic resistance rates of isolated strains of E. coli. The rate of E.coli infection on fresh meat was 90.59%, of which 42.35% of samples exceeded the maximum level. The rate of E.coli infection on fresh pork and chicken meat at traditional markets was 95.00% and 86.70%, respectively. The overall rate of antibiotic resistance was 96.75%; Amoxicillin was resistant with the highest rate (93.51%) and the lowest rate was ceftazidime (19.48%). General antibiotic resistance by sample type was 91.56%, from pork was 87.18%, from chicken was 96.05%.

Evaluation of safety criteria for the total amount of volatiles in foam food containers in Ho Chi Minh City 胡志明市泡沫食品容器中挥发性物质总量安全标准的评价

Disposable plastic utensils such as plastic boxes and foam boxes are becoming more and more popular with significant output in Vietnam. These products are mainly made from polystyrene, which should be strictly controlled to reduce the risk of food insecurity, due to the leaching of certain substances into food. Therefore, conducting a study to determine the toxic substances remaining in the styrofoam box is necessary, with objective is to determine the percentage of foam food container products with total volatiles (through the determination of substances: styrene, ethylbenzene, toluene, n-propylbenzene) exceeding the allowable limit according to QCVN 12-1:2011/BYT. The study conducted on 138 samples of foam boxes randomly collected at 46 markets in 23 districts in Ho Chi Minh City, with analytical method being GC-MS technical method for the determination of volatile compounds from foam boxes. Results showed that all 138 foam samples had amount of each styrene, ethylbenzene below 1 mg/g, total styrene and ethylbenzene less than 1 mg/g, total volatiles (styrene, toluene, ethylbenzene, n-propylbenzene) are all below 5 mg/g. Conclusion: There should be stricter control regulations on the quality of disposable food containers and the use of foam boxes should be limited to reduce the impact on the environment.

A cross-sectional study was conducted to evaluate the current status of food ingredients in the collective kitchens of businesses and schools with domestic capital in Hung Yen province in 2019. The results of the study showed that the amount of leafy vegetables, root vegetables, fruit and aquatic products purchased at the production unit determined to have a certificate of eligibility for the establishment or other equivalent papers accounts for a small proportion of 1.9%, 0.9%, 0.9%, 0.4%, respectively. 01% of vegetable and fruit providers, 41.9% of rice millers and 1.5% of aquaculture providers have certificates of eligibility for food safety or other documents. Most of the remaining raw materials were purchased from small-scale, household-scale production households that do not have a certificate of eligibility for food safety or other equivalent papers. Based on the obtained results, the research team proposes to the Provincial People's Committee to have a policy to expand the models of safe vegetable growing to meet the needs of collective kitchens as well as people in the province. Collective kitchens, especially large-scale kitchens with a large concentration of workers, need to increase the purchase of raw materials for vegetables, tubers and fruits at production facilities that have been certified to meet food safety conditions, VietGAP.

The results of the study showed that the amount of leafy vegetables, root vegetables, fruit and aquatic products purchased at the production unit determined to have a certificate of eligibility for the establishment or other equivalent papers accounts for a small proportion of 1.9%, 0.9%, 0.9%, 0.4%, respectively. 01% of vegetable and fruit providers, 41.9% of rice millers and 1.5% of aquaculture providers have certificates of eligibility for food safety or other documents. Most of the remaining raw materials were purchased from small-scale, household-scale production households that do not have a certificate of eligibility for food safety or other equivalent papers. Based on the obtained results, the research team proposes to the Provincial People's Committee to have a policy to expand the models of safe vegetable growing to meet the needs of collective kitchens as well as people in the province. Characteristic of food poisoning situation in Da Nang city in 2010 - 2020 2010 - 2020年岘港市食物中毒情况特征分析

 This current study was carried out to analyze the situation of food poisoning in ​​Da Nang city, provided solutions to implement, and proposed recommendations to ensure the good implementation of food hygiene and safety. The study's findings showed that food poisoning cases occurred in all 07 districts, the most concentrated in 2 districts Hai Chau, Thanh Khe. Poisoning caused by microorganisms was the leading cause (9 per 25 cases in total, 36 % of cases), natural toxins, toxins from puffer fish (4 per 25 cases in total, 16% of cases), and the reasons were unknown (12 per 25 cases, 48%). Places where were happened food poisoning cases included: food service establishments (16 per 25 cases, 64%), households (5 per 25 cases, 20%). The food that caused the highest proportion of food poisoning cases wasmixed, food poisoning cases occurred evenly throughout the years but mainly happened in summer (44%).

The situation assessment of Coliform, E. coli contamination in foods at charity kitchen in Thanh Hoa province and related factors 清化省慈善厨房食品大肠菌群、大肠杆菌污染状况评估及相关因素分析

A cross-sectional study was conducted on 54 samples of instant foods and 216 people (54 managers and 162 person who directly prepares food) at 54 charity kitchens in Thanh Hoa province. The study showed that 14.8% instant foods at 54 the charity kitchens were contaiminated (over the acceptibility limit) Coliform and E. coli; the percentage of food samples contaminated both Coliform and E. coli were 5.6%; only contaminated Coliform were 3.7% and only contaminated E. coli were 5.6%; 55.6% of the charity kitchens meet the requirements about food safety guarantee, in which 51.9% meet the premises conditions, 66.7% meet the equipment, tools, 59.3% meet the food preservation conditions, 70.4% meet the food processing ingredients and 42.6% meet legal records. The awareness rate of general knowledge and practice of food processing of managers and person who directly prepares food were 60.2% and 53.2%, respectively (which awareness rate of knowledge and practice of managers were 61.1% and 53.7%; person who directly prepares food were 59.9% and 53.1%). The relationship between general knowledge and practice of managers and person who directly prepares food, and relationship between condition for food safety guarantee and the percentage of food samples contaminated at charity kitchen there were statistical different (p < 0,01).

Assessment of contamination levels and exposure risk of perfluoroalkyl substances (PFOS and PFOA) in Vietnamese fish 评估越南鱼类中全氟烷基物质(PFOS和PFOA)的污染水平和暴露风险

Contamination levels of two typical perfluoroalkyl substances (PFASs) including perfluorooctane sulfonic acid (PFOS) and perfluorooctanoic acid (PFOA) were evaluated in Vietnamese fish samples by using our monitoring results and database reported in previous studies. In freshwater fish taken from West and Yen So Lakes (Hanoi), PFOS and PFOA concentrations ranged from < 0.030 to 0.48 (mean 0.12) ng/g, and from < 0.010 to 0.19 (mean 0.058) ng/g, respectively. These levels were comparable to those measured in fish samples from other areas in Vietnam, but were generally lower than values documented for fish samples from other countries. PFOS and PFOA daily intake doses via fish consumption ranged from 0.015 to 0.48 (mean 0.12) and from 0.005 to 0.20 (mean 0.065) ng/kg/day. In general, these intake doses were lower than the reference dose of 20 ng/kg/day, suggesting acceptable levels of risk.

Safety assessment of useing Ba Kich dried extract for 28 days 巴基希干浸膏使用28天的安全性评价

The “Ba kich” (Extractum Morinda ofcinalis) dried extract was evaluated for repeated dose toxicity at 28 days in rabbits. In a repeat dose toxicity test, rabbits were given oral solution of dry extract of Ba kich at the level of 0.2 g/kg and 1.0 g/kg for 28 days. Blood samples were taken on days 0, 14 and 28 to check biochemical and hematological parameters. Liver and kidney samples were obtained on day 28 for histopathology. The results of the 28-day repeated dose toxicity assessment showed that the dried Ba kich extract did not have a statistically significant effect on the biochemical and hematological indices, and did not cause damage to the histopathology of the kidney. However, dried Ba kich extract at both dose levels caused fatty degeneration and congestion in the liver of experimental rabbits.
