Nitrites are added to sausage products to accelerate ripening, improve color and microbiological indicators. Chard (Beta vulgaris var. cicla) is one of the best natural sources of nitrites, as it contains a lot of nitrates – 1680 mg/kg in a fresh vegetable. However, chard has not been used as a source of nitrites in sausage technology and in cooking it is used only in fresh, boiled or sautéed form. There are no technologies for industrial drying and processing of chard into powder. Chard powder was obtained by microwave vacuum drying and grinding to 200 microns, which was determined by the appropriate sieve size. Five samples of fermented dried sausages were prepared and evaluated during the ripening process: C1 (without nitrite and sodium nitrate), C2 (100 mg/kg sodium nitrite and 100 mg/kg sodium nitrate), M1 (0.5 % chard powder), M2 (1 % chard powder) and M3 (1.5 % chard powder). With the addition of 1.5 % chard powder (Sample M3), the protein content increased by 22.74 %, ash content increased by 41.82 %, and dietary fiber content increased by 93.75 % compared to the control sample C2. Nitrite was formed from chard powder during the ripening process, especially in treatments M2 and M3. After the entire production process of fermented dried sausages for 35 days, nitrates were detected only in sample C2. The yield of fermented dried sausages enriched with chard powder decreased by 15.95 % compared to the control sample C2. Chard powder improved the microbiological parameters of sausage products, especially in sample M3. The content of aerobic mesophilic bacteria increased by 5.84 % and the content of lactic acid bacteria increased by 8.96 % in sample M3 compared to control C2 after 35 days of fermentation and drying, which is related to the activity of the starter. The organoleptic parameters of fermented dried sausages enriched with chard powder for samples M2 and M3 were better in terms of color and texture. The results of the analysis of nutritional value, pH, nitrites and nitrates indicate the effectiveness of adding 1.5 % chard powder (Sample M3) obtained by microwave vacuum drying as a potential source of nitrites in fermented dried sausages.

In the conditions of technological development and informatization of social relations, the formation of effective organizational support for the processes of investing in green technologies is becoming more and more actualized. The object of the research is the management processes of green investment of the countries of the world by various stakeholders in the conditions of increasing movement and development of productive forces towards Industries 4.0 and 5.0. Among the problems that need to be solved, the following should be noted: – low level of management decision-making and implementation of green investment in countries with transition economies and developing countries; – high level of divergence in technological development among the countries of the world in the system of technological structures. Effective organizational and economic support for green investment at the level of the state, investor, manufacturer, and client should be included among the tools for solving these problems. A comparative analysis of green investment of the countries of the world was carried out. The factors of positive and negative impact on the green investment management process in countries with different levels of economy and technological development were formed. Modern trends in the development of green investment were investigated. The effects of the implementation of green technologies by companies of the world were noted. The benchmarking approach has been improved, with regard to the selection of constituent countries-leaders, which can be used in the management of green investments. The criterion indicators of the SWOT analysis of the green investment management system were formed on the example of the innovative project of the university. The necessary conclusions have been drawn based on the research results. The obtained results are explained by the possibility of their application in the system of implementation of projects and programs regarding investment in green technologies (solar stations, wind stations, sewage treatment system, landscaping and greening of territories, geothermal energy). Practical implementation is possible in various countries of the world under the conditions of sustainable technological development from Industry 3.0 to Industry 5.0.

The object of research is the processes of monitoring and intelligent control of computer systems in transport infrastructure projects. In the design and operation of computer networks, an urgent task is to solve the problem of providing quality services with distributed information processing, which is largely determined by the development of the network management mechanism of the transport system. The increase in the amount of digital data creates security and protection of information solely at the expense of the aspects of their design and operation. The paper considers the methods of intelligent network management of computer systems in transport infrastructure projects, analyzes their principles of operation and functions in relation to the network infrastructure. Methods using intelligent agents are analyzed and the results of their application to computer network management are presented. The use of intelligent agents in computer networks and systems allows automating complex tasks, optimizing resources and increasing the efficiency of the network of the transport economy system. They can contribute to increased productivity, safety, and user satisfaction. The considered algorithms for processing the results of the examination of the load of the transport network infrastructure are used to ensure effective management of the transport system. Processing algorithms allow analyzing the current state of traffic in different sections of the transport network. These algorithms can be used to develop optimal traffic distribution strategies. A case of their application is presented. One of the main tasks of the transport sector is to ensure traffic safety, which can be achieved by quickly processing information and receiving it distributed to all levels of the management system for quick analysis, processing, and (if necessary) response. The paper proposes to use methods of monitoring, expert evaluation of the general state of the computer network and the development of management decisions that take into account the peculiarities of the structure and functioning of computer systems in transport infrastructure projects. This ensures the ability to transmit information with specified service quality parameters with minimal network resource consumption. The research presented in this paper can be used in practice in organizations and enterprises of the transport sector during the reorganization, improvement, or integration of individual components of the information system.

During the past few years, the world community has faced a number of problems related to the delivery and storage of milk and milk products. In particular, the situation provoked by quarantine restrictions in various countries of the world forces to look for solutions regarding the use of non-traditional raw materials for the production of classic or similar food products. As a result, it is quite promising to use dairy products with extended shelf life, in particular, dry milk concentrates as the main protein carriers for the production of stable protein-fat systems. The use of dry milk proteins makes it possible to manufacture restored structural products that can be used as an alternative to classic ones. Therefore, the object of research is food components of various origins, in particular food modified starches, food fibers and their modifications, hydrocolloids. Characteristic indicators of viscosity with increasing shear stress were determined for 5 % solutions of modified starches of various types after brewing at a temperature of 80 °C. It was found that when the shear stress increases to a value of 200 Pa, there is a significant decrease in viscosity, which generally characterizes them as structural systems. The functional and technological indicators of wheat (VF-200), bamboo (BAF-200) food fibers (fiber length 200 microns) and carboxyl methyl cellulose (CMC) were studied. Increased functional and technological capabilities of CMC compared to dietary fibers were revealed. The kinetics of swelling of dietary fibers and CMC were studied, while the period of maximum intensification of the process, which is between 5 and 15 minutes, was determined. The maximum value of the swelling coefficient is characteristic for CMC 4.4±0.04, for wheat fiber 4.01±0.06, for bamboo fiber 3.81±0.05. Using the method of mathematical and statistical processing of experimental data, optimization of concentration and technological modes was carried out to achieve maximum hydration and strength of iota-carrageenan gel. It was determined that at a concentration of 1 % during brewing at 80 °C and a time of 5 min. high enough gel strength can be achieved for optimum consistency in the overall system. The result of the work is a comprehensive study of the functional technological characteristics of food additives that will form the consistency of a structural protein-fat product of the cheese type, which can be used in sausage products as a filler, with the aim of improving the organoleptic, structural-mechanical and nutritional values of the finished products.

The object of the research is the financial transactions that are subject to financial monitoring. Today, financial monitoring is an integral part of the activities of Ukrainian banks, especially during the period of martial law, since it is through banks that the process of laundering proceeds from crime most often occurs. The article discusses the peculiarities of analyzing financial transactions subject to financial monitoring in wartime. In particular, the author outlines the trends in the banking system. Given the current challenges, in particular, martial law in Ukraine, the author analyzes the dynamics of submission by banks of reports on financial transactions subject to financial monitoring, including in terms of financial monitoring features, and investigates the factors that affect their number. A forecast of the volume of reports is made. The author analyzes the recommendations of the State Financial Monitoring Service of Ukraine (SFMS), which contribute to the improvement of customer service processes in banks in order to counteract money laundering and terrorist financing. The authors also provide the main tools used for money laundering, terrorist financing, etc. during the war. The author describes the impact of money laundering and terrorist financing on the financial security of the state. The military aggression of the russian federation against Ukraine has had a significant impact on money laundering, terrorist financing, and the financing of the proliferation of weapons of mass destruction. Due to untimely/non-operational or inefficient/poor quality analysis and appropriate response of banks to financial transactions that are subject to financial monitoring, this direction in the activities of banks requires special attention. In the current situation, there are new challenges and threats that have signs of criminal acts and fraud: – financing of war and terrorism/separatism; laundering the proceeds of corruption; – embezzlement of budget funds and funds of state enterprises; – laundering of proceeds from crimes related to fraudulent acquisition of funds of citizens and legal entities by deception, including under the guise of assistance to the Armed Forces of Ukraine. The authors propose to improve the legislative and regulatory acts in the field of financial monitoring and to introduce penalties for bank employees for improper performance of their duties at the legislative level. The authors also focus on the proper automation of processes in banks.

The chemical composition of sweet potato (Ipomoea batatas var. Portu Orange), grown in Ukraine, was studied to determine its potential in shortbread technology. Portu Orange sweet potato has a high content of starch (11.2 %), natural sugars (4.7 %), dietary fiber (3.8 %) and food pigments. To obtain the highest quality characteristics and preserve the antioxidant properties of sweet potato during drying, an innovative microwave vacuum drying method was used. This allowed us to produce Portu Orange sweet potato powder with a high content of starch (43 %), natural sugars (18 %), dietary fibre (14.6 %) and preservation of food colouring properties. According to organoleptic parameters, Portu Orange sweet potato has an orange color, which was formed with a combination of anthocyanin pigmentation of the skin (orange) and β-carotene pigmentation of the flesh (light orange). In shortbread technology, Portu Orange sweet potato is used in powder form, which is an alternative to starch, sugar, orange food colorings, gluten-containing cereals and egg products. Portu Orange sweet potato powder was added to the shortbread recipe in the amount of 38 % to completely replace sugar and chicken eggs. The wheat flour in the recipe was replaced by 80 % low-gluten wheat flour and 20 % sweet potato powder. Compared to regular shortbread, the protein content increased by 24.3 % to 9.2 g/100 g, the dietary fiber content increased by 74.6 % to 10.3 g/100 g, and the ash content increased by 155.6 % to 2.3 g/100 g. The fat content of shortbread with sweet potato powder was reduced by 7.5 %, the carbohydrate content was reduced by 11.5 % and the energy value was reduced by 8 % to 407.8 kcal/100 g. Texture parameters were improved, making shortbread with sweet potato powder less hard, the hardness was reduced by 48 %, but at the same time the fracturability indicators were maintained, the fracturability was reduced by only 2 %, compared to the regular shortbread, which made it more acceptable to consumers. The obtained changes in the nutritional value of the shortbread, the improvement of the texture, the reduction of the gluten content and the presence of a high amount of biologically active substances confirm the effectiveness of using Portu Orange sweet potato powder for dietary low-gluten nutrition.

Portu Orange), grown in Ukraine, was studied to determine its potential in shortbread technology. Portu Orange sweet potato has a high content of starch (11.2 %), natural sugars (4.7 %), dietary fiber (3.8 %) and food pigments. To obtain the highest quality characteristics and preserve the antioxidant properties of sweet potato during drying, an innovative microwave vacuum drying method was used. This allowed us to produce Portu Orange sweet potato powder with a high content of starch (43 %), natural sugars (18 %), dietary fibre (14.6 %) and preservation of food colouring properties. According to organoleptic parameters, Portu Orange sweet potato has an orange color, which was formed with a combination of anthocyanin pigmentation of the skin (orange) and β-carotene pigmentation of the flesh (light orange). In shortbread technology, Portu Orange sweet potato is used in powder form, which is an alternative to starch, sugar, orange food colorings, gluten-containing cereals and egg products. Portu Orange sweet potato powder was added to the shortbread recipe in the amount of 38 % to completely replace sugar and chicken eggs. The wheat flour in the recipe was replaced by 80 % low-gluten wheat flour and 20 % sweet potato powder. Compared to regular shortbread, the protein content increased by 24.3 % to 9.2 g/100 g, the dietary fiber content increased by 74.6 % to 10.3 g/100 g, and the ash content increased by 155.6 % to 2.3 g/100 g. The object of this study is the performance of the SYCL standard tools when solving the LU matrix decomposition problem. SYCL is a fairly new technology for parallel computing in heterogeneous systems, so the topic of evaluating the performance of the standard on specific tasks in the field of parallel computing is relevant. In the study, the algorithm of parallelized LU decomposition of a square matrix was implemented by means of the SYCL standard and standard C++, and an experiment was conducted to test the implementation in a heterogeneous system with several types of processors. During testing, the program received square matrices of various dimensions as input, and the output was the execution time of the LU schedule on the selected processor. The obtained results, presented in the form of tabular and graphic data, show the advantage of the implementation of the SYCL standard over ordinary C++ by more than 2 times when using a graphics processor. It was experimentally shown that the implementation on SYCL is almost not inferior in speed to the implementation on ordinary C++ when executed on a central processor. Such results are caused both by the high possibility of parallelizing the LU schedule algorithm itself, and by the great work of the developers of the standard on its optimization. The obtained results indicate the possibility of speeding up the solution of the LU decomposition of the matrix and similar algorithms by means of SYCL when using heterogeneous systems with processors optimized for data parallelism. The results of the study can be used in justifying the choice of technology for solving LU matrix decomposition problems or problems with a similar parallelization scheme.

The object of research is the architecture of general-purpose services for economic researches. The excessive popularity of service-oriented architecture implementations has led to consideration of the application of this approach in the production of organizations engaged in processing statistical and economic information for analytical research. This is due to the possibility of reusing services, each of which is designed to perform specific statistical functions, and the availability of design solutions for compiling these functions into a program for implementing a statistical task solution, using orchestration as a basis for dynamic service calls. The paper proposes an approach to the development of external statistical services as a set of software products for solving analytical tasks by groups of independent researchers. Since such researchers do not have sufficient financial support, the use of external statistical services will allow them to conduct an in-depth analysis of their research results. The proposed approach assumes that such a service should have its typical data storage structure with fixed types and attributes, to which the researcher imports their own data, selects a calculation execution scheme, initializes their execution, and receives results. Taking into account this storage scheme, the authors have identified the main groups of metadata necessary to describe the implementation of the statistical process. A statistical business process typically consists of a set of procedures that implement certain statistical operations and data transformations, and the provided set of metadata allows for the realization of the process goal and activity. Issues that require further in-depth research for the practical implementation of the proposed idea have been identified. The use of service-oriented architecture for building statistical processes allows for standardizing the approach by unifying the functions of individual services. The availability of possibilities for practical implementation of software products in a service-oriented architecture using a cloud environment in modern IT industry serves as a guide for further research direction.

The object of research is the energy sector of Ukraine, specifically the gas supply system of the national economy. One of the most problematic places is the dependence of the Ukrainian economy on the import of natural gas (NG). Ukraine is rich in various natural resources, in particular, in natural and associated gas. However, own wells for NG extraction are not enough for gas supply to industrial enterprises and the population. Therefore, part of the necessary gas is imported. In the course of the study, methods of alternative supplies were analyzed, namely, liquefied natural gas (LNG), options for its supply with subsequent regasification were analyzed. The global market for liquefied natural gas (LNG) was studied and it was shown that the production and consumption of LNG is constantly increasing. Since Ukraine is part of Europe, and the main suppliers of LNG for European countries are the USA and Norway, one of the options for gas supply for Ukraine considered the supply of LNG to the territory of Poland by sea transport, its regasification and subsequent transportation to consumers through existing pipelines. The second option is the supply of LNG to the Ukrainian coast of the Black Sea. To do this, it is necessary to study prospective transportation routes, build logistics and terminals for receiving and regasifying LNG. Since the depth of the channels from the Mediterranean to the Black Sea is small, the option of supplying natural gas from Central Asia by pipeline to the Black Sea coast of Georgia, its liquefaction, transportation by sea and regasification is proposed. This option requires significant capital expenditures for the construction of a natural gas liquefaction plant on the territory of Georgia and a regasification complex on the Ukrainian coast or a floating terminal. In the course of the work, LNG quality criteria used in the world were studied, and it was noted that for the purchase and use of LNG in Ukraine, it is necessary to develop own standards for controlling its composition. Because the technology of providing the consumer with natural gas using LNG is more flexible than pipeline transport. Its implementation will make it possible to provide Ukraine with natural gas in the required quantities and, if necessary, to promptly change the volume of deliveries.

The object of the article is the formation of marketing priorities for the successful development of a domestic city. The subject of the article is analytical tools for modeling the city brand. The article analyzes the current problems of branding territories in the context of intensified competition for resources and factors of production in postwar Ukraine. The authors consider the city's brand to be a kind of unique resource that will play an important role in the competition of territories. That is why, in the process of post-war development of domestic cities, the strategic vision of which should be formed now, even before the end of the war, it is necessary to identify the elements of the urban environment that will form the basis of the city's brand. The need to develop a city's (territory's) brand, taking into account the new reality, actualizes the scientific search in this direction. The research methodology is based on the fundamental provisions of the theory of branding and spatial identification, as well as the theory of stakeholders and its working tool – stakeholder analysis. The peculiarities of identifying stakeholders in the city development, their systematization and assessment using the tools of stakeholder analysis are determined. The approaches to the formation, definition and organization of the needs of the territory, taking into account the strategic context, are substantiated. The formalization of stakeholder behavior practices through the use of theoretical game models is recommended. The results of the analysis of the possibilities of using international ratings for the development of territorial (primarily urban) branding strategies are presented. The main trends in urban innovation, which focus on the creation of «smart» cities in post-war Ukraine, are outlined. The results obtained outline a set of complementary analytical methods and tools, the practical use of which will make it possible to modernize the branding of domestic territories. The proposed approach to the formation of a city brand based on the introduction of stakeholder analysis with appropriate tools can play an important role as a basis for creating effective methods of territory brand management. As well as the formation of strategies for their development, taking into account the strengths and weaknesses and development potential for the growth of the welfare of the population of the territory and Ukraine as a whole.
