The results have been given in the paper for morphologic and chemical composition of “Smena 9” broiler cross eviscerated carcasses with average weight 1467.97 g and their separate parts and tissue constitutes. The study has revealed that mass share of breast part and thighs reach 37.87 and 30.24% of carcass weight. Such traits are typical for high productive foreign crosses. Mass shares of muscular tissue of breast part and thighs with skin and skin fat are 32.29 and 24.94% respectively.

Egg quality maintaining with high egg production is actual problem. This research task has been to analyze quail egg morphologic and biochemical composition in Omskaya quail breed in groups that are divergent in egg production (±1.5 ÷2σ from average). Eggs of quails with high egg production intensity had greater egg shell mass (by 0.19 g, P<0.001) and less white mass (by 0.47 g, P<0.05). Outer layers proportion has changed with egg production increasing. Protein content in quail egg white and yolk have been 10.64 and 16.71% in quails with high egg production that is less than in quails with low egg production by 0.1 and 0.23% respectively.

Creation of specialized lines at the base of Lind geese breed has become the result of long selection work in “Vurnarets” LRS. This lines has been included in the State Register of selection achievements: the male MC line (the patent No. 12759 from 23.05.2023) and the female YAC line (the patent No. 12758 from 23.05.2023). “Mackulinsky” geese cross (the patent 12757 from 23.05.2023) has been received by these lines crossing. New cross poultry comparative tests have confirmed the new line usage effectiveness. Young day goslings cost is lower by 24.9% and gosling mass gain being reared for meat is higher by 7.7%.

The investigation purpose is to carry out analysis of physical and chemical traits and rheological characteristics for gelatin received from broiler paws with enzyme acid hydrolysis method. Experimental gelatin sample has been shown to surpass control one in dry matter content including protein mass fraction by 1.5% average. The rest physical and chemical traits of experimental sample was at control sample level. Experimental gelatin characteristic has shown significant enzyme acid hydrolysis influence at gelation and gel strength traits.

The investigation resulted in some optimal regime of preliminary heating of peking “Star 53” cross ducks hatching eggs in these eggs keeping after laying. For example eggs heating during three days after laying has increased profit for 1 daily duckling to 30.8 rubles and profitability level to 44.5%.
