Neoplasms of different etiology in broilers pose some problems for poultry breeding. Researchers give the possibility to establish that skin carcinomas and organ-specific tumors in liver and intestine are the most often tumors in broilers at one of poultry processing enterprises at Russia Central region. But current rules of veterinary and sanitary expertise of slaughtered animals and meat products don’t contain any indication of assignment of carcass- es with some tumors. The fact necessitates of additional laboratory investigation of meat from this poultry for carcass veterinary sanitary evaluation justification.

The results have been given in the paper on the research of egg grinding using grinder with disk cutting, MIM-500 mincer and on experimental stand at the base of RPA 25 disperser and also using coagulation process of grind- ed egg (mélange with grinded egg shell in natural proportion) on experimental stand for coagulated egg mélange pro- ducing. The data received will be at the base of development of initial requirements for equipment for coagulated grinded egg production.

Speed up of convective drying process of poultry meat chips is the important reserve of its production ef- fectiveness improvement. Minimal water binding capacity of meat chips takes place at pH 5.2-5.4 corresponding to mus- cle protein isoelectric point. This may be ensured by usage of microorganism start cultures (MSC) and glucon-delta-lac- ton (GDL) in curing mixture composition. Shortening drying process at the expense of MSC by 40% and GDL by 55% gives a possibility to increase drying equipment performance.
