Abstract Fruits are an important source of vitamins and minerals, thus, essential components of the human diet. They play a significant role in human nutrition. To understand the relation between the acceptance of various fruits and intractable barriers, Fruit preferences, frequency of consumption of different fruits, the information on the use of various fruits during religious rituals and the most intractable barriers were assessed. A survey was conducted by random sampling technique. A pre-tested, semi-structured food frequency questionnaire was used to collect the information from 528 subjects from 134 households all aged 18 years and above from Hyderabad, Andhra Pradesh, India. The consumption of vitamin A rich fruits is mostly seasonal. In this category, the consumption of mango was highest (38%) on a daily basis during summer. The frequency of consumption of vitamin C rich fruits was observed to be more on ‘once a month’ basis. As a large variety of fruits are available, the frequency of consumption of particular fruits decreases. However, tomato (ripe) is consumed more (32.8%) on a daily basis and 58.1 percent on weekly 2 or 3 times basis. This study has revealed that though there is a large variety of fruits available in Hyderabad of which most of them can be purchased all over the year and food expenditure though concentrated to a fair extent on the fruits among the residents but still many types of fruits often travel longer distances and are sold at higher prices and hence are considered luxurious and hence are almost consumed occasionally.

Abstract Enzymes are present in living organisms but are not living themselves. Enzymes are very mild components in the environment. Enzymes acts as a molecular worker offering an answer to the desire for a cleaner more gentle less polluting, non-aggressive and hyper genic chemistry with minimum damage to textile substrate and the environment. Present investigation was aimed to assess the effect of enzymatic agents on physical properties of khadi fabrics. Cotton khadi and cotton blend khadi fabrics have been selected for this study. Physical properties of treated fabrics were analyzed statistically. Enzymatic treatment was given at different concentrations. The treated khadi fabrics were evaluated in terms of fabric weight loss, stiffness, tensile strength, tearing strength, crease recovery and drapability. It was found that as the concentration of enzymes increased, drapability and number of nodes of treated fabrics were also increased. Cellulase treated fabrics were graded as the best (highest THV), followed closely by amylase treated fabrics.

Abstract India is one of the largest producers and exporters of sesame seeds. Sesame is an oilseed with high nutritional quality. With a rich, nutty flavor, it is a common ingredient in cuisines across the world. When germinated, its nutritional quality is enhanced and can be used in various commonly consumed foods prepared at the household level. In the present study, an effort was made to analyze nutrient and antinutrient contents of germinated (48 hours) sesame seeds and develop biscuits using its powder in different proportions (5g, 10g, 15g, 20g, 25g and 30g). The sensory evaluation of the developed biscuits showed highest acceptability for those with 15g germinated sesame seed powder. Its nutritive value and shelf life were found to be good.

Abstract Due to the dual responsibility of the homemakers, there is a great pressure for productivity enhancement and quality work. It was felt important to know the kitchen gadgets of different materials and finishes that are available in the market. A study was planned to find the different materials and finishes that are used for the kitchen gadgets, are available in the market. It was observed that rural and urban shops had good stock of aluminium, hindalium and stainless steel gadgets. Only 3 rural shopkeepers kept glass, food-grade plastics and chinaware items that too especially made available during festival season. In urban area thirteen shopkeepers were selling non-food grade plastic and chinaware items throughout the year. It was further found that kitchen gadgets of fourteen finishes were sold in the rural and urban markets. None of the rural shops was found having high and satin polish or porcelain enamel finished products.
